PERFECT FRENCH FRIES

Perfect French Fries image

In a nutshell, here it is: Soak potatoes, dry potatoes, fry potatoes, drain potatoes, then fry again!

Provided by Ree Drummond : Food Network

Categories     side-dish

Time 2h50m

Yield s: 8 servings

Number Of Ingredients 3

5 pounds russet potatoes
Vegetable or peanut oil, for frying
Sea salt

Steps:

  • Peel and rinse the potatoes. Then cut them into sticks by cutting the potato in 4 or 5 vertical pieces, and then cutting each piece into sticks.
  • Place them in a large bowl and cover with cold water. Allow them to soak, 2 to 3 hours. (You can also stick them in the fridge and let them soak overnight.)
  • When you're ready to make the fries, drain off the water and lay the potatoes on 2 baking sheets lined with paper towels. Blot with paper towels to dry them.
  • Heat a few inches of oil in a heavy pot to 300 degrees F. In 3 or 4 batches, cook the potatoes until soft, 4 to 5 minutes per batch. They should not be brown at this point! You just want to start the cooking process. Remove each batch and drain on new/dry paper towels.
  • Once all the potatoes have been fried at 300 degrees F, turn up the heat until the oil reaches 400 degrees F. When the oil's hot, start frying the potatoes in batches again, cooking until the fries are golden and crisp. Remove the potatoes from the oil and drain on paper towels.
  • Sprinkle with sea salt and dive in!

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 9

4 idaho potatoes
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1/8 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon cayenne pepper
2 tablespoons herbes de provence
1/4 cup parmesan cheese, grated (use more to taste)

Steps:

  • Preheat oven to 425.
  • Wash potatoes and peel them if you like (I leave skins on for more crunch!) Cut potatoes in half lengthwise, and then in half lengthwise again. Cut into strips, as thin as possible. It's ok if some are a little thicker.
  • Place cut up fries in a big ziploc bag and add olive oil. Shake to coat.
  • In a small bowl, mix all spices, and then dump into bag. Shake to coat.
  • Line 2 cookie sheets with foil. Spray lightly with cooking spray.
  • Arrange fries in a single layer on sheets (don't overlap too much) and sprinkle grated parmesan all over potatoes. Put in preheated oven and bake for 30-45 minutes. You want them to turn golden brown with some crispy edges. 4-5 of them on the outside may turn darker but they are still extremely tasty and just cook faster than the ones in the middle. Watch them closely for desired texture! Just make sure the parm cheese starts to become a golden brown color and potatoes are cooked through!

Tips for Making Healthy French Fries:

  • Choose the right potatoes: Russet potatoes are the best choice for making fries because they are low in starch and have a firm texture that holds up well to frying.
  • Cut the potatoes into even-sized strips: This will ensure that they cook evenly.
  • Soak the potato strips in cold water for 30 minutes before frying: This will help to remove excess starch and make the fries crispier.
  • Dry the potato strips thoroughly before frying: This will help to prevent them from sticking together.
  • Use a healthy oil for frying: Olive oil or avocado oil are good choices.
  • Fry the potato strips in batches: This will help to prevent them from overcrowding the pan and cooking unevenly.
  • Cook the potato strips until they are golden brown and crispy: This will usually take about 5-7 minutes.
  • Drain the potato strips on paper towels: This will help to remove excess oil.
  • Season the potato strips with salt, pepper, and other desired seasonings: Serve immediately.

Conclusion:

Making healthy French fries at home is easy and rewarding. By following these tips, you can make fries that are crispy, flavorful, and a healthier alternative to traditional French fries. Enjoy your homemade healthy French fries as a side dish, snack, or appetizer. Experiment with different seasonings and toppings to find your favorite flavor combinations.
