4 cups diced sweet potatoes or 4 cups yams
3/4 teaspoon cinnamon

SWEET POTATOES WITH TSIMMES GLAZE

Sweet Potatoes With Tsimmes Glaze image

Traditional tsimmes is a stew of sorts that includes sweet potatoes, carrots, one or two kinds of dried fruits, and spices. It's usually served as a side dish at Rosh Hashanah, the Jewish New Year, but it also makes frequent appearances on the Passover Seder table. The word "tsimmes" sometimes means a fuss or commotion, or even a muddle. This version is anything but fussy and definitely not muddled. Here, halved sweet potatoes are simply roasted and served with a scrumptious glaze that includes prunes, orange juice, fresh ginger and a hit of lemon.

Time 45m

Yield 4 to 6 servings

Number Of Ingredients 9

4 small sweet potatoes (6 to 8 ounces each), halved lengthwise
1 tablespoon olive oil
Kosher salt and black pepper
2 navel or Cara Cara oranges, zested and juiced
1 tablespoon fresh lemon juice
3 tablespoons honey
1/2 teaspoon ground cinnamon
1 (1 1/2-inch) piece of fresh ginger, peeled and cut into fine slivers
1/2 cup bite-size pitted prunes, quartered

Steps:

  • Position a rack on the lower third of the oven and heat oven to 400 degrees. Line a sheet pan with foil.
  • Rub the sweet potatoes with the oil and season with salt and pepper. Arrange on the pan cut sides down and roast on the low rack until nicely browned on the cut sides and a paring knife inserted meets no resistance, 30 to 40 minutes. If they are getting too dark on the cut sides but are not yet done, turn them over.
  • Meanwhile, combine the orange juice, half of the orange zest, lemon juice, honey, cinnamon, ginger, prunes and a big pinch of salt in a small saucepan. Bring to a boil, then turn down the heat to maintain a steady, low simmer. Cook, stirring and smashing a few prunes against the pan occasionally, until thick and syrupy about 15 minutes. Cover to keep warm.
  • Arrange sweet potatoes on a serving platter cut sides up and spoon the glaze over top, rewarming with a splash of water to loosen, if needed. Sprinkle the remaining orange zest over the top.

CITRUS-GLAZED SWEET POTATOES

Citrus-Glazed Sweet Potatoes image

These candied sweet potatoes work as a side dish for any dinner or holiday celebration by balancing citrusy sweet and savory flavors - and they also produce top-notch leftovers. Right out of the oven or the fridge, they are sure to add a pleasantly tart note to any meal. The braising liquid thickens as the tubers cook, resulting in a tangy glaze that coats every bite. Its acidity also helps the sweet potatoes stay intact with a slight bite even as they soften. The thinly sliced orange zest becomes tender and develops a marmalade-like taste. The shiny strips make for a beautiful garnish, along with the syrupy pan sauce.

Provided by Yewande Komolafe

Time 2h30m

Yield 6 servings

Number Of Ingredients 11

3 medium oranges
1 lemon
2 limes
3/4 cup packed dark brown sugar
1 teaspoon kosher salt (Diamond Crystal)
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon black pepper
3 1/2 pounds sweet potatoes (about 9 small)
4 tablespoons unsalted butter, cut into 1/2-inch cubes

Steps:

  • Heat oven to 375 degrees (see Tip). Use a vegetable peeler to peel strips of zest off 2 oranges. Cut the strips into thin matchsticks using a sharp knife and transfer to a large bowl. Juice all the oranges, the lemon and limes into the bowl for 1 1/4 cups juice. Whisk in the brown sugar, salt, ginger, cinnamon, nutmeg and black pepper until the sugar dissolves.
  • Generously peel the sweet potatoes, removing the skin and the tougher layer of flesh just beneath. If your sweet potatoes are larger than 2 inches in diameter, halve or quarter lengthwise. Cut into 1-inch-thick rounds or pieces, add to the citrus mixture and toss to coat.
  • Transfer the sweet potatoes and juice mixture to a 9-by-13-inch shallow glass or ceramic baking dish. Dot the top with the butter. Bake, stirring every 20 to 30 minutes to cook and coat evenly, until the sweet potatoes are tender and glazed, 1 1/2 to 2 hours. A paring knife should slide through the potatoes easily and the glaze should be the consistency of syrup.
  • Let cool for about 10 minutes before serving. The dish can be made ahead and cooled, then wrapped tightly and refrigerated for up to 2 days. Reheat in a 350-degree oven, covered with foil, or in a microwave, covered with a microwave-safe cover or plastic wrap.

Tips:

  • Choose the right sweet potatoes: Look for firm, smooth sweet potatoes with no blemishes or bruises. Avoid any that are soft or have cracks in the skin.
  • Wash the sweet potatoes thoroughly: Scrub the potatoes with a vegetable brush under cold water to remove any dirt or debris.
  • Prick the sweet potatoes: Use a fork to prick the potatoes all over. This will help them cook evenly and prevent them from bursting.
  • Bake the sweet potatoes until tender: Depending on the size of your potatoes, this will take 45-60 minutes. You can check for doneness by inserting a fork into the center of the potato. If it goes in easily, the potato is done.
  • Glaze the sweet potatoes: While the potatoes are still hot, brush them with your favorite glaze. This will help them caramelize and give them a delicious flavor.
  • Serve the sweet potatoes immediately: These potatoes are best served hot out of the oven. You can garnish them with chopped nuts, seeds, or fresh herbs.

Conclusion:

Healthy Fat-Free Glazed Baked Sweet Potatoes or Yams are a delicious and nutritious side dish that can be enjoyed by people of all ages. They are easy to make and can be customized to your liking. Whether you prefer a sweet or savory glaze, these potatoes are sure to please. So next time you're looking for a healthy and satisfying side dish, give these glazed baked sweet potatoes a try.
