HEALTHY SALTED DARK CHOCOLATE PEANUT BUTTER OATMEAL TRUFFLES
These healthy truffles will blow you away! The soft, nutty, peanut butter oatmeal center combined with the salted dark chocolate outer layer make them a delicious dessert. They are fairly easy to make with just a handful of ingredients, so I like to whip them up in small batches for the week and keep the in the fridge. If you'd like to make more, you can definitely double or triple the recipe!

HEALTHY DARK CHOCOLATE TORTE (PIE)
***Inspired by Alton Brown's Moo-less Chocolate Pie.*** Happy New Year! I am happy to present this decadent and (yes!) healthy recipe for an awesome dessert which I made for Christmas dinner 2011, not knowing what it would taste like. "Oh my!" I would never have guessed it wasn't totally sinful if I didn't already know. You rarely can go wrong w/an Alton Brown recipe, so I knew it'd be good, just not *this* good! Silken tofu: where have you been all my life?!? Note: I have made a few minor adjustments to ingredients and order of incorporation, which worked better for me, and hopefully will for you, too. Prep time includes 2 hours for chilling in the refrigerator post-assembly. (The original recipe can be found here: http://www.doctoroz.com/videos/alton-browns-dairy-free-chocolate-pie)

HEALTHY DOUBLE DARK CHOCOLATE MUFFINS
My husband loves to have a muffin as a mid-morning snack, so I came up with something a little healthier for him to take to work. You can use either mashed bananas or applesauce. The applesauce will give a more neutral flavor if you don't like the taste of bananas.

HEALTHY DEEP DARK CHOCOLATE MUFFINS
This is my recipe for a dark, deep, moist, intensely chocolate muffin. And it is actually healthy and high in fiber! I recommend using whole wheat pastry flour in this recipe, Bob's Red Mill make a great one. The pastry flour makes all of the difference in the world as well as the instant espresso which intensifies the chocolate flavor by leaps and bounds, enjoy!

- In another bowl, add the buttermilk, applesauce, eggs, oil and vanilla; whisk until blended.
- Add the liquid ingredients to the dry ingredients. Mix just until well combined, do not overmix.
- Pour batter evenly into muffin cups.

Tips:
- Choose high-quality dark chocolate: Look for dark chocolate with a cocoa content of at least 70%. The higher the cocoa content, the lower the sugar content and the more antioxidants the chocolate will contain.
- Use a double boiler or microwave to melt the chocolate: This will help to prevent the chocolate from overheating and becoming grainy.
- Be patient when you're melting the chocolate: Don't rush the process, or the chocolate will seize up.
- Add a little bit of salt to the chocolate: This will help to balance out the sweetness of the chocolate and make it more complex.
- Be creative with your toppings: You can add nuts, seeds, dried fruit, or even spices to your dark chocolate bark.
Conclusion:
Dark chocolate is a delicious and healthy snack that can be enjoyed in many different ways. By following these tips, you can make your own healthy dark chocolate bark at home that is both delicious and nutritious.
