1 spaghetti squash
1 onion, diced
1 tablespoon curry powder
1 teaspoon cinnamon
1 (28 ounce) can crushed tomatoes
1 lb peas
1 lb corn
1 cup raisins

Steps:

  • First, microwave the spaghetti squash for about 20 minutes and get the "noodles" ready.
  • Place diced onion in a wok and add curry powder and cinnamon.
  • Add a little water and cook until onions are translucent.

  • Add the spaghetti squash noodles to the sauce until well mixed and coated with sauce.
  • Time to cook the spaghetti squash is included in prep time.

Tips:

  • Choose spaghetti squash with a deep yellow color, as this indicates ripeness and sweetness.
  • To easily cut the spaghetti squash, use a sharp knife to slice it in half lengthwise. Then, use a spoon to scoop out the seeds and stringy pulp.
  • When roasting the spaghetti squash, place it cut-side down on a baking sheet. This will help the spaghetti squash to cook evenly and prevent it from becoming watery.
  • To make the curry sauce, use a variety of spices, such as cumin, coriander, turmeric, and garam masala. This will give the sauce a complex and flavorful taste.
  • If you want a spicier curry sauce, add a pinch of cayenne pepper or red chili flakes.
  • For a creamy curry sauce, add a dollop of coconut milk or Greek yogurt.
  • Serve the curried spaghetti squash with a side of rice or quinoa for a complete meal.
