1/2 Purple/Red Onion (thinly sliced)
2 Tbsp Avocado Oil (or Olive oil)
2 Tbsp Balsamic Vinegar
1 Lemon (juiced)
1 Tbsp Italian Seasoning
1 tsp Salt
1/2 Tsp Black Pepper

  • Add the cut-up tomatoes, cucumbers, and onion into a large bowl
  • In a small bowl, add all of the dressing ingredients, mix and pour over the bowl of veggies.

After we finish eating the veggies, I like to strain the seeds out of the juice and use it as a salad dressing substitute on a green salad. Since you make it in a bowl with a sealable lid, it is great for picnics or potlucks. The prep time also includes refrigeration time.
