I love this salad. My daughter got this recipe from her boss. We have made it for several years now. It is a Huge hit at BBQ's, in fact everyone always wants a copy of the recipe.A friend sudgested I make copies of the recipe when I take it to gatherings. Great Idea! The best part about this recipe is you get a lil bit of something in every bite! That is why it is so important to cut your veggie's up into small bite size pieces. I also only use 1/4 to 1/2 cup of fresh green onions

Tips:

  • Choosing the right broccoli and cauliflower: Select broccoli and cauliflower heads that are compact and have tightly closed florets. Avoid those with signs of wilting or discoloration.
  • Preparing the vegetables: Cut the broccoli and cauliflower into bite-sized florets. Rinse them thoroughly under cold water and pat dry with a clean kitchen towel.
  • Blanching the vegetables: Blanching helps to preserve the鮮豔 color and crisp texture of the broccoli and cauliflower. Bring a large pot of salted water to a boil. Add the broccoli florets and cook for 2-3 minutes, or until they turn bright green. Remove the broccoli with a slotted spoon and immediately transfer it to a bowl of ice water to stop the cooking process. Repeat the process with the cauliflower florets.
  • Making the dressing: The dressing is a key component of this salad, so make sure to use high-quality ingredients. Whisk together the mayonnaise, Greek yogurt, lemon juice, Dijon mustard, honey, salt, and pepper until smooth and creamy.
  • Assembling the salad: In a large mixing bowl, combine the blanched broccoli and cauliflower florets, red onion, celery, carrots, and almonds. Pour the dressing over the vegetables and toss to coat evenly. Chill the salad in the refrigerator for at least 30 minutes before serving.

Conclusion:

This healthy broccoli cauliflower salad is a delicious and nutritious side dish that is perfect for any occasion. It is packed with vitamins, minerals, and antioxidants, and it is also a good source of fiber. The salad is also very versatile and can be easily customized to your liking. For example, you can add different vegetables, such as shredded cabbage or bell peppers, or you can use a different type of dressing, such as a vinaigrette or a creamy ranch dressing. No matter how you choose to make it, this salad is sure to be a hit with everyone who tries it.
