HEALTHY BLUEBERRY BREAKFAST SMOOTHIE

Healthy Blueberry Breakfast Smoothie image

A quick recipe I thought up while trying to decide what to eat for breakfast. Great if you are trying to figure out what to do with those blueberries in the fridge or freezer! Also great on-the-go! Delicious and includes many foods that are a great way to start your day! Many of the ingredients, except for the blueberries and yogurt, are optional and vary depending on your own taste. I love cinnamon and a thick, super-cold smoothie. This recipe is super versatile, and you can change it depending on dietary needs or personal preference. Have fun with it!

Categories     Smoothie

Time 5m

Number Of Ingredients 6

1 1/2 cups to 2 cups unsweetened vanilla almond milk or water
1 1/2 cups frozen blueberries
1 1/2 cups frozen bananas (I freeze my bananas in 1/2″ slices)
1/4 cup almond butter
Optional nutrition boosters: 1/4 cup old-fashioned oats and/or 2 tablespoons flax seed
1 to 2 teaspoons maple syrup, if necessary (I usually don't need it)

Steps:

  • In a blender, combine all of the ingredients.
  • Blend on low until the blender gains traction, then ramp up to the highest speed as soon as possible (or if your blender has a smoothie function, that will work great). Stop to scrape down the sides or add more milk if necessary.
  • Once the smoothie is completely smooth and creamy, taste it and blend in maple syrup if you'd like a sweeter smoothie. Divide the smoothie into 2 glasses. Serve immediately!

HEALTHY BLUEBERRY SHAKE

Time 3m

Yield 2 cups, 1-2 serving(s)

Number Of Ingredients 7

1 cup milk or 1 cup soymilk
1/2 frozen banana
2/3 cup frozen blueberries
2 tablespoons whey or 2 tablespoons soy protein
2 tablespoons almonds or 1 tablespoon flax seed meal
1 teaspoon honey (or a sprinkle of Splenda or sugar)
1 scoop ice cream (if you're making it for dessert)

Steps:

  • Dump everything together in the blender. You may need to add a little more milk to make it blend - I just splash a little in as needed, using the minimal amount because I like my shakes thick.
  • Blend until smooth. Enjoy!

  • Add a scoop of protein powder: If you're looking for a more filling and protein-packed shake, add a scoop of your favorite protein powder.
  • Use unsweetened almond milk or coconut milk: If you're trying to keep your shake low in calories, use unsweetened almond milk or coconut milk instead of whole milk.
  • Add a handful of leafy greens: If you want to add a boost of nutrients to your shake, add a handful of leafy greens, such as spinach or kale. You won't even taste them!
