HEALTHY BLUEBERRY-RICOTTA TARTLETS

Healthy Blueberry-Ricotta Tartlets image

News flash: Dessert can be the perfect place to add calcium to your diet. We did just that by using ricotta cheese in these sweet little tartlets. (Eight percent of your daily value, so not too shabby!) The apricot jam does double duty: As a sweetener for the ricotta plus as a glaze for the berries.

BERRY RICOTTA TARTLETS

Berry Ricotta Tartlets image

Provided by Giada De Laurentiis

Time 1h46m

Yield 15 to 18 tartlets

Number Of Ingredients 16

1 cup all-purpose flour, plus extra, for dusting
1/2 cup almond flour
1/4 teaspoon fine sea salt
1/2 cup (1 stick) unsalted butter, at room temperature
1/2 cup sugar
1 tablespoon honey
1 teaspoon pure vanilla extract
4 medium strawberries, chopped into 1/4 to 1/2-inch pieces to yield 1/2 cup
1/2 cup blackberries or raspberries, halved
1/2 cup blueberries
1 tablespoon lemon juice
1 tablespoon powdered sugar
1 1/2 cups whole milk ricotta
1/4 cup powdered sugar
2 teaspoons lemon zest
Special equipment: a 2 1/2-inch round cookie cutter

Steps:

  • For the crust: In a medium bowl, whisk together the all-purpose flour, almond flour, and salt. Set aside. In a stand mixer fitted with the paddle attachment, beat the butter and sugar on high speed until light and fluffy, 2 to 3 minutes. Beat in the honey and vanilla. With the machine running, gradually add the dry ingredients and blend until incorporated. Transfer the mixture to a work surface and knead into a dough. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  • Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone liner. Set aside.
  • On a lightly floured work surface, roll the dough into a 12-inch diameter circle, about 1/4-inch thick. Using a 2 1/2-inch round cookie cutter, cut out circles of the dough and arrange on the prepared baking sheet. Gather any scraps of dough and gently knead together. Roll out until 1/4-inch thick. Cut out additional circles of dough and place on the baking sheet (there should be a total of 15 to 18 circles). Bake until slightly golden around the edges, 10 to 12 minutes. Cool on the baking sheet for 15 minutes.
  • For the berries: In a medium bowl toss together the strawberries, blackberries, blueberries, lemon juice, and sugar. Let the mixture stand for 30 minutes.
  • For the ricotta topping: In a medium bowl, mix together the cheese, powdered sugar, and lemon zest.
  • To assemble the tartlets: Spoon 1 1/2 tablespoons of the ricotta topping in the center of each crust. Using a small spoon, make a shallow well in the ricotta topping and fill with a little of the berry mixture. Arrange on a platter and serve.

Time 8h30m

Yield Serves 12 to 16

Number Of Ingredients 12

1 box (11 ounces) vanilla-wafer cookies, such as Nabisco Nilla
1/4 cup plus 3 tablespoons granulated sugar
1/2 teaspoon kosher salt
1 stick unsalted butter, melted
1 cup whole-milk ricotta
16 ounces cream cheese
1 cup confectioners' sugar
1 tablespoon finely grated lemon zest, plus 4 tablespoons fresh juice (from 1 to 2 lemons)
1 1/4 cups heavy cream
5 cups blueberries (from 3 pint containers)
1 1/2 teaspoons cornstarch
Fresh mint leaves, for serving (optional)

Steps:

  • Pulse cookies in a food processor until finely ground. Add 1/4 cup granulated sugar, 1/4 teaspoon salt, and butter; pulse until all crumbs are moist (you should have about 3 1/2 cups). Press mixture into the bottom of a 9-by-13-inch baking pan; refrigerate while making filling.
  • Blend ricotta, cream cheese, confectioners' sugar, zest, and 3 tablespoons lemon juice in clean food processor until very smooth. Transfer to a large bowl. Beat cream on medium-high speed to stiff peaks, then fold into ricotta mixture
  • Dollop 2 1/2 cups cream mixture over crust; spread evenly to cover with an offset spatula. Top with 2 cups berries. Dollop with remaining cream mixture; spread to cover berries. Wrap in plastic and refrigerate at least 8 hours.
  • In a small saucepan over medium-high heat, combine 1 1/2 cups blueberries with 2 tablespoons water and remaining 3 tablespoons granulated sugar, 1 tablespoon lemon juice, and 1/4 teaspoon salt. Cook, stirring, until blueberries begin to burst, 2 to 3 minutes. Whisk together cornstarch and 2 tablespoons water; stir into blueberry mixture. Bring to a boil, then cook 1 minute more. Remove from heat. Stir in 1 more cup berries; let cool completely. Spoon berry mixture over chilled cake. Garnish with remaining 1/2 cup berries and mint leaves. 1/4 cup finely ground blanched almonds
2 tablespoons toasted wheat germ

1/2 teaspoon baking powder
4 tablespoons cold, unsalted butter, cut into pieces
1/4 to 1/3 cup low-fat buttermilk
1 1/4 cups part-skim ricotta
1/4 teaspoon salt
1/4 teaspoon cinnamon
1 tablespoon plus 2 more tablespoons honey
2 cups blueberries

Steps:

  • In a food processor, pulse together all-purpose flour, finely ground blanched almonds, toasted wheat germ, light brown sugar, kosher salt, and baking powder. Tips:

  • For a gluten-free crust, use a gluten-free flour blend or make your own by combining 1 cup almond flour, 1/2 cup oat flour, and 1/4 cup tapioca starch.
  • If you don't have ricotta cheese, you can substitute cottage cheese or Greek yogurt.
  • To make the filling ahead of time, combine the ricotta cheese, sugar, vanilla extract, and lemon zest in a bowl and refrigerate for up to 24 hours.
  • To prevent the crust from becoming soggy, pre-bake it for 10-12 minutes before adding the filling.
  • If you don't have a tart pan, you can use a 9-inch pie plate. Just be sure to trim the excess dough around the edges.
  • For a perfectly golden crust, brush the edges of the tartlets with an egg wash before baking.
  • Let the tartlets cool completely before serving. This will help the filling to set and the crust to firm up.
