Time 40m

Number Of Ingredients 11

1 tablespoon vegetable oil, such as safflower
1 medium onion, chopped
4 garlic cloves, chopped
Coarse salt and ground pepper
2 tablespoons tomato paste
2 tablespoons chili powder
2 tablespoons unsweetened cocoa powder
1 pound ground beef sirloin
2 cans (14.5 ounces each) diced tomatoes in juice
2 cans (14.5 ounces each) pinto beans, rinsed and drained
Toppings, such as reduced-fat sour cream, sliced scallions, and baked tortilla chips, for serving (optional)

Steps:

  • In a large, heavy-bottomed saucepan, heat oil over medium-high. Add onion and garlic, and season with salt and pepper. Cook until softened, 3 to 5 minutes.
  • Add tomato paste, chili powder, and cocoa powder. Cook, stirring, until mixture is fragrant, about 1 minute. Add beef, and cook, breaking up with a spoon, until no longer pink, 3 to 5 minutes.
  • Add tomatoes (with their juice) and beans. Bring to a boil over high; reduce to a simmer, and cook until chili is slightly thickened, 10 to 15 minutes. Serve with toppings, if desired.

Categories     Soup/Stew     Beef     Super Bowl     Quick & Easy     Healthy

Yield 12 servings

Number Of Ingredients 22

2 tablespoons olive oil
1 pound ground pork
1 pound ground beef
1 pound chuck steak, fat trimmed, cut into 1-inch cubes
6 garlic cloves, minced
2 cups water
2 tablespoons ground cumin
2 tablespoons chili powder
2 teaspoons dried oregano
2 teaspoons salt
1 teaspoon cayenne pepper
3 6-ounce cans tomato paste
2 teaspoons sugar
1 cup diced celery
1 cup diced carrots
3 cups diced fresh tomatoes
3 cups diced onions
3 cups diced red bell peppers
3 cups canned black beans, drained, rinsed (from three 15-ounce cans)
1 cup chopped fresh cilantro
2 3/4 cups (about) beef broth
Grated cheddar cheese

Steps:

  • Heat olive oil in heavy large pot over medium-high heat. Add ground pork and ground beef and sauté until brown, about 3 minutes. Add cubed beef and garlic and sauté 5 minutes. Add 2 cups water; bring to boil. Add cumin, chili powder, oregano, salt, and cayenne pepper. Reduce heat, cover, and simmer 10 minutes. Add tomato paste and sugar and simmer 5 minutes. Add celery, carrots, tomatoes, onions, and peppers and simmer until vegetables are tender, about 30 minutes. Add black beans and cilantro to chili. Add beef broth 3/4 cup at a time, until thinned to desired consistency. (Can be prepared 1 day ahead. Refrigerate uncovered until cold, then cover and keep refrigerated.) Bring chili to simmer. Ladle hot chili into bowls; top with grated cheddar cheese and serve.

Tips:

  • Use lean ground beef: This will help reduce the fat and calories in your chili.
  • Don't overcook the beef: Overcooked beef can be tough and chewy. Cook it just until it is browned.
  • Use a variety of beans: This will add flavor and texture to your chili. Some good options include black beans, kidney beans, and pinto beans.
  • Use fresh vegetables: Fresh vegetables will give your chili a more vibrant flavor. Some good options include onions, peppers, and tomatoes.
  • Season your chili well: Chili is a dish that can handle a lot of seasoning. Don't be afraid to add chili powder, cumin, garlic powder, and salt and pepper to taste.
  • Let your chili simmer: Simmering allows the flavors to meld together and develop. The longer you simmer your chili, the better it will taste.
  • Serve your chili with your favorite toppings: Some popular toppings include sour cream, cheese, and chopped onions.

Conclusion:

Healthy beef chili is a delicious and nutritious meal that is perfect for a cold winter day. It is also a great way to use up leftover ground beef. By following these tips, you can make a healthy and flavorful chili that your whole family will enjoy.
