With a large abundance of apples on hand all year round, here is a recipe that is tender and has a delicate apple flavor.

2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup chopped walnuts
½ cup butter, softened
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 cup apples - peeled, cored and shredded

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5 inch loaf pan.
  • Mix together flour, baking powder, soda, salt and nuts.
  • In a large bowl, beat margarine, sugar and 1 egg until smooth. Beat in second egg, and stir in vanilla. Stir in shredded apples. Pour flour mixture into batter; stir just until moistened. Spread into prepared pan.
  • Bake for 50 to 60 minutes, or until an inserted toothpick comes out clean. Let stand 10 minutes, then remove from pan. Place on a rack to cool.

I've adapted this from a Rosemary Stanton recipe putting my own little twist on things. This loaf is a bit healthier than many regular loaf and cake recipes. It's free of lactose, butter and eggs and is a great snack when you're on the move or looking for a healthier alternative to satisfy those indulgent cravings!

Number Of Ingredients 8

1 cup chopped dates
1/4 cup honey
1 teaspoon bicarbonate of soda
1 cup apple juice
2 grated granny smith apples, grated, excess liquid squeezed out and reserved (any other cooking apple will suffice)
1/2 cup chopped walnuts
1 1/2 cups whole wheat flour
2 teaspoons baking powder

Steps:

  • In a small saucepan heat the dates, honey, bicarbonate soda, apple juice and the reserved apple juice. Bring to the boil whilst stirring then allow to simmer for 2-3 minutes. Remove from heat and allow to cool slightly.
  • In a large mixing bowl mix togther the apple, walnuts, flour and baking powder. Make a little well in the centre and pour in the contents of the saucepan. Mix well until all combined.
  • Pour the mixture into a lined 14 x 21 loaf tin and bake in a moderate oven for 40 minutes, or until the centre is cooked. Allow to cool before cutting into slices.

2 cups oats
1 cup all-purpose flour
⅓ cup brown sugar
3 tablespoons ground cinnamon
1 teaspoon salt
1 teaspoon baking powder
1 ½ cups milk
½ cup unsweetened applesauce
6 tablespoons honey
¼ cup peanut butter
1 tablespoon vanilla extract
2 eggs, beaten
3 ripe bananas, mashed
¼ cup milk chocolate chips
¼ cup semisweet chocolate chips
1 teaspoon all-purpose flour, or as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease an 8-inch square baking pan.
  • Combine oats, 1 cup flour, brown sugar, cinnamon, salt, and baking powder together in a bowl. Beat milk, applesauce, honey, peanut butter, and vanilla extract together in a large bowl until smooth; add eggs and mix well. Mix oats mixture into milk mixture until batter is just combined; stir in bananas. Pour 1/2 of the batter into the prepared baking pan.
  • Bake in the preheated oven until partially cooked, about 5 minutes. Remove pan from oven and cool completely.
