Tips:

  • Use fresh zucchini: Fresh zucchini has a higher water content, which makes for a moist and tender bread. If you only have frozen zucchini, thaw it completely and squeeze out any excess moisture before using.
  • Grate the zucchini finely: Finely grated zucchini will distribute evenly throughout the bread and won't create large pockets of moisture.
  • Don't overmix the batter: Overmixing the batter will develop the gluten in the flour, which will make the bread tough. Mix just until the ingredients are combined.
  • Use a loaf pan with a non-stick coating: This will help the bread to release easily from the pan.
  • Bake the bread until a toothpick inserted into the center comes out clean: This usually takes about 50-60 minutes.

Conclusion:

This healthier lemon zucchini bread is a delicious and nutritious way to enjoy your favorite quick bread. It's made with whole wheat flour, oats, and honey, and it's packed with zucchini, lemon, and walnuts. This bread is moist and tender, with a slightly tangy flavor from the lemon. It's perfect for breakfast, lunch, or a snack.
