1 1/2 pounds ground pork
1/2 cup finely chopped fresh parsley
1 1/2 teaspoons kosher salt
2 cloves garlic, finely grated
1/2 cup fruity barbecue sauce
Freshly cracked black pepper
4 canned pineapple rings
16 very thin slices red onion
1/4 to 1/2 cup beer
4 regular hamburger buns
2 to 3 tablespoons salted butter, melted
One 10- to 12-ounce bag salted plantain chips (lengthwise strips are best, but discs work too)

Steps:

  • In a large bowl, combine the pork, parsley, salt, garlic, 1/4 cup of the barbecue sauce and some pepper. Gently mix, then separate into 4 balls and rest at room temperature for 1 hour.
  • In a shallow dish, add the pineapple rings in one layer, then on each ring, add 4 slices of onion. Brush the tops with the remaining 1/4 cup barbecue sauce. Pour beer in the side of the dish up to the level of the pineapple. Rest at room temperature for 1 hour.
  • Heat an outdoor grill to medium high for direct and indirect heat (to cook on a griddle, see Cook's Note). Press the burgers into patties slightly larger than the buns. Place the burgers over the direct heat and cook on one side for 6 to 8 minutes. Flip to the indirect heat side of the grill and cook until the internal temperature reads 155 degrees F. Remove from the grill and lightly tent the burgers with loose-fitting aluminum foil for 5 minutes.
  • Meanwhile, shake the excess marinade off the pineapples and onions. Grill the pineapple rings on one side until charred and easily released to be flipped; grill on the other side until grill marked. Using a grill pan, cook the onions until tender and charred, about 15 minutes. Let rest for 5 minutes.
  • Brush the outside of the buns with the butter and place them on the grill buttered-side down. Grill until toasted but still shiny, 1 to 2 minutes. Build each burger starting with a bottom bun, a patty, a pineapple ring, some onions, a handful of plantain chips and a top bun.

2 lbs boneless skinless yellowfin tuna fillets, finely chopped
1/2 cup panko breadcrumbs
1 egg, beaten
1/4 cup Dijon mustard
2 tablespoons minced garlic
2 tablespoons honey
1 1/2 tablespoons sesame oil
2 teaspoons kosher salt
1/2 teaspoon fresh ground black pepper
1/4 teaspoon cayenne pepper
vegetable oil
6 hamburger buns with sesame seeds, split
1/2 cup bottled teriyaki sauce

Steps:

  • Prepare a medium-hot fire in a charcoal grill with a cover; or preheat a gas grill to medium-high.
  • Make the salsa: combine all the ingredients in a bowl; stir to mix; set aside to let flavors blend.
  • Make the patties: In a bowl, combine the tuna, panko, egg, mustard, garlic, honey, sesame oil, salt, pepper, and cayenne; mix well.
  • Divide mixture into 6 portions; form the portions into patties to fit the buns.
  • When the grill is ready, brush grill rack with vegetable oil.
  • Place the patties on the rack, cover, and cook, turning once, just until opaque throughout, about 4 minutes on each side.

1/2 cup mayonnaise
3 tablespoons sour cream
3 tablespoons cilantro leaves, finely chopped
1 tablespoon fresh lime juice
2 teaspoons fresh ginger, minced
1 teaspoon garlic, minced
1/4 teaspoon salt
1 egg
1/2 cup panko breadcrumbs (Japanese bread crumbs)
4 teaspoons soy sauce
4 teaspoons sugar
1 tablespoon sesame oil
1 tablespoon fresh ginger, minced
1 tablespoon garlic, minced
2 teaspoons fresh lime juice
1 teaspoon lime zest, grated
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt
1 1/2 lbs ahi tuna fillets, finely chopped
1 tablespoon vegetable oil
4 seeded kaiser rolls, split
1 large maui onion, thinly sliced (or other sweet onion)
1 large vine-ripened tomatoes, sliced

Steps:

  • Sauce:
  • Char peppers over gas flame or under broiler until blistered on all sides. Enclose in a paper bag, and let stand 15 minutes.
  • Peel peppers, remove stem and seeds, and dice.
  • Measure 1/4 cup diced peppers into a small bowl, and add mayonnaise, sour cream, cilantro, lime juice, ginger, garlic, and salt. Stir well.
  • Burgers:
  • Meanwhile, in large bowl, beat egg and stir in panko, soy sauce, sugar, sesame oil, ginger, garlic, lime juice and zest, red pepper flakes, and salt.
  • Add ahi and combine gently. Form 4 patties.

I have added wasabi, which is japanese horseradish, to these burgers because it gives them a wonderful kick. You wasabi in the asian sections of a supermarket, but if you can not get a hold of it a dab of english mustard will do.

1 red onion, finely chopped
2 plum tomatoes, seeded and chopped
1 green chili, seeded and finely chopped
1 lime, juice of
2 teaspoons olive oil
salt & freshly ground black pepper
400 g fresh tuna
1 -2 teaspoon wasabi paste
1 tablespoon sesame seeds
1 ciabatta, loaf sliced and toasted

Steps:

  • Begin by making the salsa: Stir all the ingredients together and set aside at room temperature for at least an hour to let the flavours infuse.
  • Place the tuna in a food processor and pulse until coarsely minced. Transfer to a bowl and mix with the wasabi paste, sesame seeds and some salt and pepper. With damp hands, shaoe the mixture into 4 even sized burgers.
  • Preheat the oven to 200 degrees celcius. SPray a baking sheet with a little oil and arrange the burgers on the tray. Spray with a lttle more oil and bake for 15 minutes until golden brown and just cooked through.
  • Place the tuna burgers on the toasted ciabatta slices and top with a dalloop of salsa. Garnish with slices of fresh lime and serve warm.
