ALL PURPOSE HAWAIIAN MARINADE
I originally concocted this recipe for a party I hostessed. I used it on chicken thighs and legs, but since then, I've tried it beef and pork, as well. I also think it would be awesome on tuna steaks or shrimp! I've also used Pineapple Coconut Juice and it's EXCELLENT. Enough for 3 lbs meat of choice.

- In a large bowl, mix all ingredients together. Allow meat to marinate in zip top baggies for 12 to 48 hours.
- Remove meat from bags and pour marinade into sauce pan. Bring to boil over medium high heat and for 10 minutes.
- Baste meat with marinade in between flips on the grill.

- Whisk together the pineapple juice, soy sauce, and garlic.
- Pierce the steaks all over with a fork then place them in a zip top bag, or air tight container and pour the marinade over the steak. Squeeze the air out and seal the bag. Let marinate for 30 minutes, up to overnight. Marinating at least 2 hours will produce the best flavor.
- Heat the grill to medium-high heat. Once hot, place the steaks on the grill and cook 5-7 minutes per side.
- Remove from grill and let rest 5 minutes. Enjoy!

This is a family favorite! Every time I serve this chicken, I get rave reviews! I serve this over coconut rice garnished with green onions. It makes a beautiful presentation. To make coconut rice, simply replace half of the water with coconut milk and cook rice as directed. This recipe makes a lot of marinade. If I am serving more people I will increase the amount of chicken and keep the recipe for the marinade the same. Goes really well with steamed broccoli or edamame.

- Whisk to combine 1/2 bottle of the marinade, pineapple juice, ginger, and rosemary. Add the steak, & marinade to a large freezer zip loc bag and marinate in the fridge for at least 24 hours. Remove the steak from the refrigerator about 30 minutes prior to cooking. Heat your grill to high. Remove the steak from the marinade and pat dry with paper towels. Season with salt and pepper and set aside. For the glaze, pour the remaining marinade into a small saucepan. Bring to a boil and then simmer until slightly thickened and reduced by half. Grill the steak for about 6 to 8 minutes on each side (medium-rare), brushing them with the glaze in between each turn. Let rest for at least 10 minutes so that all of the juices can evenly distribute. Thinly slice on an angle.

- Whisk pineapple juice, soy sauce, sugar, vinegar, and oil in a small bowl until sugar is dissolved. Add onion and ginger. Set aside 2 Tbsp. marinade for butter. Transfer remaining marinade to a large resealable plastic bag. Add steaks and seal bag, pressing out excess air. Chill at least 1 day.
- Remove steaks from marinade, pat dry, and let sit until room temperature, about 1 hour.

- Steaks can be marinated 3 days ahead. Keep chilled. Butter can be made 3 days ahead. Keep chilled.
