½ pound skinless, boneless chicken breast halves
1 cup teriyaki marinade
1 cooking spray
1 (8 ounce) can pineapple tidbits, drained
¾ cup pizza sauce
1 (14 ounce) package refrigerated pizza crust
10 slices Canadian bacon, quartered
1 (8 ounce) package shredded mozzarella cheese
1 pinch dried oregano, or to taste

Steps:

  • Marinate chicken breasts in teriyaki marinade in the refrigerator for 1 hour.
  • Preheat the oven to 400 degrees F (200 degrees C). Lightly spray a 9x13-inch baking pan with cooking spray. Place marinated chicken on the prepared pan; discard excess marinade.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from the oven and let cool slightly, about 10 minutes. Keep oven on.

1 lb refrigerated bread dough (No-Knead Flatbreads - Master Recipe (Pizza, Naan, Focaccia), grapefruit size piece)
1/2 cup pizza sauce
1 1/2 cups mozzarella cheese, shredded
4 ounces pepperoni, sliced (to taste)
1/2 cup parmesan cheese, grated
1/2 cup barbecue sauce
1 cup diced chicken breast, cooked
1 cup mozzarella cheese, shredded
1/2 cup Fontina cheese, shredded
pickeled jalapeno pepper (to taste)
2 tablespoons cilantro, chopped (to taste)
1/2 cup pizza sauce
1 (8 ounce) can pineapple tidbits, drained
1 1/2 cups mozzarella cheese, shredded
4 ounces deli ham, sliced

Steps:

  • Use the refrigerated pre-mixed dough for No-Knead Flatbreads Recipe #387518.
  • Prepare 2 large baking sheet pans with parchment or Silpats, set aside.
  • Preheat oven to 400 degrees F.
  • Remove the Olive Oil Flatbread dough (Recipe #387518) from the refrigerator. Lighly dust the surface with flour and cut off a 1 pound (grapefruit size) piece.
  • With lightly floured hands quickly shape dough into a ball by streching the surface of the dough around to the bottom on all four sides, rotating the ball a quarter turn as you go.
  • On a lightly floured board, flatten the dough, with hands and rolling pin, into a 1/4 inch thick rectangle, dusting with minimal flour if necessary to keep dough from sticking to the rolling pin. If difficulty is experienced in rolling out the dough, allow it to rest for a few minutes. I've found that pulling the dough with my hands works best.
  • Spread the sauce on the dough, then cheese and top with meat, leaving some of the cheese exposed so that it can help hold the roll together as it bakes.
  • Starting with the long end roll the dough into a log.
  • NOTE: Cut only the number of pieces you want to bake. The rest can be wrapped and stored in the refrigerator for up to 5 days, or can be frozen for up to 2 weeks.
  • Using kitchen shears, cut the dough into 1/2 inch pieces.
  • Place them on the prepared sheet, leaving plenty of space for them to expand when they bake.
  • Bake for 15-18 minutes, or until golden brown and the cheese has melted and caramelized a bit.

2 tablespoons vegetable oil, for the pan
1/2 cup ricotta cheese
2 teaspoons italian seasoning
1 cup cubed ham
1/2 cup well-drained pineapple, bits
1 cup shredded mozzarella cheese
marinara sauce with scallion, for serving

Steps:

  • Preheat the oven to 400 degrees F. Brush each cavity of the Wilton Pineapple Cake pan with vegetable oil, making sure you get into all the crevices.
  • If using ready-to-bake pizza dough, unroll the dough from the cans. Cut each sheet of dough into 4 equal rectangles so you have 8 rectangles (you will only need 6 of these rectangles).
  • If using homemade pizza dough, roll it out on a well-floured work surface until it's 1/8 to 1/4-inch thick. Trim to make it an 18 x 18-inch square then cut that square into six 9 x 6-inch rectangles.
  • Place one rectangle of dough into a cavity of the pan and gently press down so it lines it. Add a layer of ricotta cheese, then pineapple chunks, cubed ham, mozzarella cheese and a sprinkle of Italian seasoning on top. 2 tablespoons honey
8 ounces boneless skinless chicken breasts
8 ounces crescent rolls (may use reduced fat)
8 ounces Laughing Cow cheese (I use light)
4 ounces deli ham, thinly sliced, then julienned
kosher salt & fresh ground pepper, to taste

Steps:

  • Preheat oven to 450º.
  • Grill or bake chicken breasts, seasoning with salt and pepper to taste. Time is approximately 20 minutes, depending on breast size.
  • Allow to cool, then chop chicken in a very large dice. Set aside. (Chicken may be cooked alongside pineapple, just for longer!).
  • Mix pineapple and honey; broil for 10 minutes, stirring frequently. Remove from oven; set aside.
  • Drop oven temperature to 375º.
  • Roll out crescent dough into rectangle; pinch seams to seal and form an edge.

Olive oil, for frying and brushing
4 ounces ham or prosciutto, chopped
1 16-ounce ball homemade pizza dough or your favorite store-bought variety, split into 2 8-ounce balls
1 cup pizza sauce or your favorite store-bought variety
1 8-ounce ball fresh mozzarella, thinly sliced
1 1/2 cups pineapple cubes
4 or 5 fresh basil leaves, shredded

Steps:

  • Preheat the broiler.
  • Add a little oil to a medium cast-iron pan and fry the ham over medium-low heat until it's a little brown and crispy, about 3 minutes. Set aside.
  • Roll each pizza dough half into circles the size of your cast-iron pan. The dough will probably be slightly thicker than what you're used to.
  • Heat the pan to medium and add about 1 tablespoon of olive oil. Add 1 piece of the rolled-out dough. Cook for 2 to 3 minutes, until the dough is bubbly on top and browned underneath. Flip, add half of the sauce, half of the mozzarella, half of the ham, and half of the pineapple. 3 tablespoons extra-virgin olive oil
1 1/2 cups diced pineapple (from about 1/2 pineapple)
1 bunch scallions, cut into 1-to-2-inch pieces
1/4 pound deli-sliced ham
3/4 cup shredded white cheddar cheese (about 3 ounces)
3/4 cup shredded muenster cheese (about 3 ounces)

Steps:

  • Preheat a grill to medium. Shape each piece of pizza dough into a ball. Drizzle 1 tablespoon olive oil on each of 2 rimmed baking sheets, place 1 dough ball on each baking sheet and turn to coat in the oil. Place a metal cooling rack upside down on the grill perpendicular to the grill grates (or use a grill basket); brush the rack with the remaining 1 tablespoon olive oil. 1 tablespoon whole-grain cornmeal
1 teaspoon Gold Medal™ whole wheat flour
1 can (8 oz) pizza sauce
2 cups shredded Italian mozzarella cheese (8 oz)
1 package (6 oz) sliced Canadian bacon, cut into fourths
1 can (8 oz) pineapple chunks, well drained
1/2 cup thinly sliced red onion
1 small green bell pepper, chopped (1/2 cup)
