Time 5m

Yield 6 serving(s)

Number Of Ingredients 7

1 (20 ounce) can can crushed pineapple in syrup, undrained
1 (6 ounce) package serving package vanilla flavor instant pudding and pie filling mix
1 (8 ounce) package container sour cream
9 inches prepared shortbread pie crusts
1 (8 ounce) can can sliced pineapple, drained and halved
1 (8 ounce) jar maraschino cherries, drained
2 tablespoons sweetened flaked coconut

Steps:

  • 1. In a large bowl, combine crushed pineapple with its syrup, dry pudding mix, and sour cream; mix until well combined. Spoon into pie crust and decorate top with pineapple slices and cherries; sprinkle with coconut.
  • 2. Cover and chill at least 2 hours before serving.
  • Note: Do not make the vanilla pudding according to package directions. Just add the dry pudding mix right in with the other ingredients.

Tips:

  • To ensure a smooth and lump-free mixture, whisk the eggs and sugar together in a separate bowl before adding them to the cooked pineapple mixture.
  • To achieve a golden brown crust, brush the top of the pie生地 with melted butter before baking.
  • To prevent the pie filling from curdling, gradually whisk the hot pineapple mixture into the egg mixture, tempering the eggs.
  • To avoid a soggy bottom crust, pre-bake it for 10-15 minutes before filling and baking again.
  • For a richer flavor, use dark brown sugar instead of white sugar.
  • To add a nutty flavor, toast the coconut flakes before adding them to the pie filling.
  • To achieve a gooey center, reduce the amount of cornstarch in the pie filling.
  • For a creamier texture, use heavy cream instead of milk in the pie filling.
  • To make a gluten-free pie, use a gluten-free pie crust mix or homemade gluten-free pie crust recipe.

Conclusion:

The Hawaiian Pineapple Coconut Pie is a delightful tropical treat that combines the vibrant flavors of pineapple and coconut in a creamy, custard-like filling nestled in a flaky pie crust.
