2 cups sliced fresh strawberries or 2 cups frozen unsweetened strawberries, if fresh are not available
1 (3 ounce) package strawberry gelatin
1 (3 1/2 ounce) package vanilla pudding mix, NOT INSTANT
1 (8 ounce) can crushed pineapple with juice, drained and reserve juice
water
1 teaspoon coconut extract
1 cup Cool Whip
2 tablespoons flaked coconut

Steps:

  • Place strawberries in the pie crust, either fresh or frozen, that have been drained. In a medium saucepan combine the dry gelatin pudding and mix. Add enough water to the pineapple juice to make 1 1/2 cups liquid. Add to dry pudding mixture. Cook over medium heat stirring constantly until mixture thickens and comes to a boil. Pour hot mixture over the strawberries.
  • Refrigerate 2 hours.

1 can(s) pineapple, crushed with juice, 8 oz
1 pkg Cool Whip, thawed, 8 oz
1 c coconut, shredded
1 tsp vanilla
1/3 c sour cream
1 pkg vanilla instant pudding (4 serving size; I use sugar-free)

Steps:

  • 1. In a bowl mix pineapple and sour cream with dry pudding mix; mixing well. Add coconut (save a couple of tablespoonfuls for garnish), vanilla, and Cool Whip (save a couple of tablespoonfuls for garnish).
  • 2. Pour mixture into pie crust. Spread remaining Cool Whip in a small design (I make a little circle on top for garnish). Sprinkle remaining coconut on top. Place in the fridge for a couple of hours to set up.

2 tsp melted margarine
2 Tbsp water
1 c graham cracker crumbs
FILLING
1 Tbsp gelatin, unflavored
2 Tbsp cool water
1/4 c boiling water
1/2 c cottage cheese, lowfat
1/4 c skim milk
1 tsp vanilla extract
1 tsp coconut extract
1 1/2 Tbsp sugar
2 c crushed pineapple, drained
GARNISH
ground cinnamon

  • 1. Preheat oven to 250 degrees
  • 2. Combine ingredients for crust in ungreased 9-inch pie pan. Pat out evenly to form crust.
  • 3. Bake in preheated oven for 15 minutes. Cool.

2-3 ripe sliced bananas
1/2 c chopped macadamia nuts

FOR HOMEMADE SHORTBREAD CRUST
1 1/2 c shortbread cookies...crushed
6 Tbsp melted, cooled butter
1/4 c sugar

  • 1. If making crust mix all ingreds together and bake in a preheated 350degree oven 10-15min...Cool and proceed.
  • 2. mix condensed milk and lemon juice till mixture thickens...Set aside...Slice your bananas and layer over bottom of your crust...Pour milk mixture over bananas....Sprinkle your pineapple and nuts over milk layer....Next spread your cool whip over pie and chill for 2-3 hrs...When ready to serve feel free to sprinkle with maraschino cherries some sweetened coconut and a few more macadamia nuts...Just plain YUMMY:)
