HAWAIIAN KOREAN KAL BI MARINADE

Hawaiian Korean Kal Bi Marinade image

Original recipe given to me by Hawaiians. Best for grilling pork or beef ribs and even chicken, just stick to 4-5 pounds. Can be halved for smaller amounts of meat or doubled for feeding a crowd. Better than the old red barbecue sauce!

Categories     main-dish

Time 4h28m

Yield 4 to 6 servings as a main course

Number Of Ingredients 11

5 pounds Korean style beef short ribs*
1 cup brown sugar, packed
1 cup soy sauce
1/2 cup water
1/4 cup mirin (rice wine)
1 small onion, peeled and finely grated
1 small Asian pear, peeled and finely grated
4 tablespoons minced garlic
2 tablespoons dark sesame oil
1/4 teaspoon black pepper
2 green onions, thinly sliced (optional)

Steps:

  • Preparation: Sprinkle brown sugar over beef and mix well to evenly coat. Let sit at room temperature for 10 minutes while preparing marinade. In a bowl, whisk together remaining ingredients. Transfer beef into a large sealable freezer bag (you may need 2). Add marinade, press out excess air from bags, and seal. Turn bag over several times to ensure beef is evenly coated. Refrigerate for at least 4 hours but preferably overnight.
  • Heat gas or charcoal grill to medium-hot. Drain excess marinade off beef. Grill short ribs, turning once, to desired doneness, about 3 to 4 minutes per side. Garnish with thinly sliced green onions, if desired. Serve whole pieces as a main course or cut into smaller pieces, using kitchen shears, for a starter or party nibble.

KALBI BBQ RIBS HAWAIIAN STYLE

Kalbi BBQ Ribs Hawaiian Style image

This is one of our favorite things to BBQ, everyone here loves sweet meat. I have experimented for years, and this is the best, lots of input from friends, and it started from Korean recipes. In Hawaii, we have alot of mixed up ethnic foods. This is almost always served with steamed white rice and some potato-mac salad and some salted cabbage.

KALBI (KOREAN BBQ SHORT RIBS)

Kalbi (Korean BBQ Short Ribs) image

This is the staple of Korean fine dining, but too expensive in the restaurants. It is also simple to make at home, and will leave your guests asking for more. Total time includes marinating time. Traditionally, should be served sliced, rolled in romaine lettuce leaves, along with white rice, lightly browned garlic slices, and gochujang (Korean red pepper paste).

Time 3h30m

Yield 4

Number Of Ingredients 7

¾ cup soy sauce
¾ cup brown sugar
¾ cup water
1 garlic clove, minced
2 green onions, chopped
1 tablespoon Asian (toasted) sesame oil
2 pounds Korean-style short ribs (beef chuck flanken, cut 1/3 to 1/2 inch thick across bones)

Steps:

  • In a bowl, stir together the soy sauce, brown sugar, water, garlic, green onions, and sesame oil until the sugar has dissolved.
  • Place the ribs in a large plastic zipper bag. Pour the marinade over the ribs, squeeze out all the air, and refrigerate the bag for 3 hours to overnight.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate. Remove the ribs from the bag, shake off the excess marinade, and discard the marinade. Grill the ribs on the preheated grill until the meat is still pink but not bloody nearest the bone, 5 to 7 minutes per side.

Tips:

  • Use a variety of soy sauces. Kalbi marinade typically uses a combination of light and dark soy sauce. Light soy sauce adds a salty, savory flavor, while dark soy sauce adds a richer, more complex flavor.
  • Add some sweetness. Brown sugar or honey are common sweeteners used in kalbi marinade. They help to balance out the salty and savory flavors of the soy sauce.
  • Don't forget the garlic and ginger. These two ingredients are essential for adding flavor to kalbi marinade. Garlic adds a sharp, pungent flavor, while ginger adds a warm, slightly spicy flavor.
  • Use fresh pineapple juice. Fresh pineapple juice adds a bright, tropical flavor to kalbi marinade. It also helps to tenderize the meat.
  • Marinate the meat for at least 4 hours. The longer you marinate the meat, the more flavorful it will be. However, you can marinate the meat for up to 24 hours if you have the time.
  • Cook the meat over a high heat. Kalbi is traditionally cooked over a charcoal grill. However, you can also cook it in a skillet or on a griddle. Just make sure to cook the meat over a high heat so that it gets a nice char.
  • Serve kalbi with rice and kimchi. Kalbi is traditionally served with rice and kimchi. Kimchi is a spicy fermented cabbage dish that adds a nice balance to the sweet and savory flavors of kalbi.

Conclusion:

Kalbi is a delicious and easy-to-make dish that is perfect for any occasion. Whether you are grilling it outdoors or cooking it in a skillet, kalbi is sure to be a hit. So next time you are looking for a new recipe to try, give kalbi a try. You won't be disappointed.
