1 can pineapple tidbits ((14 ounces) with juice reserved for dressing)
1 red pepper (diced)
2 cups diced ham
1 green onion (thinly sliced)
½ cup mayonnaise or dressing
¼ cup sour cream
1 tablespoon dijon mustard
⅓ cup pineapple juice
1 teaspoon cider vinegar
1 teaspoon honey
¼ teaspoon garlic powder
black pepper to taste

Steps:

  • Cook pasta according to package directions. Drain and run under cold water.

1 can (8 ounces) unsweetened pineapple chunks
3 cups cooked brown rice
2 cups cubed fully cooked ham
1 can (8 ounces) sliced water chestnuts, drained and halved
1/4 cup finely chopped red onion
1/2 cup plain yogurt
1/2 teaspoon salt
1 medium apple, chopped
Lettuce leaves
1/3 cup chopped macadamia nuts, toasted
1/4 cup sweetened shredded coconut, toasted

Steps:

  • Drain pineapple, reserving 1 tablespoon juice. In a large bowl, combine the pineapple, rice, ham, water chestnuts and onion.
