⅓ cup ketchup
¼ cup brown sugar
2 teaspoons cornstarch
¼ cup vinegar
1 teaspoon salt
1 teaspoon soy sauce
½ teaspoon Worcestershire sauce
1 (9 ounce) can crushed pineapple
3 pounds assorted chicken pieces such as breasts, thighs, wings, and drumsticks

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).

1 20 ounce can pineapple tidbits in juice, NOT drained
1 lb. thin-sliced boneless skinless chicken breasts or chicken tenderloins, diced into bite-sized pieces
Optional garnish: chopped cilantro and diced cooked bacon

Steps:

  • Preheat oven to 425 degrees F. Spray a baking dish with cooking spray. I used an 11 x 7-inch dish.
  • In a large bowl, whisk together brown sugar, soy sauce, garlic, and chicken broth.

1 1/2 cups uncooked Minute® instant white rice
1 can (8 oz) pineapple tidbits, undrained
1 red bell pepper, diced
1/4 cup sliced green onions (about 3)
1 1/4 cups Progresso™ chicken broth (from 32-oz container)
4 boneless skinless chicken breasts (5 oz each)
1/2 teaspoon salt

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • Make teriyaki glaze by mixing brown sugar, soy sauce, gingerroot, garlic and pepper flakes in 8-inch nonstick skillet. Stir over medium heat until sugar is melted. In small bowl, beat cornstarch and water; add to soy mixture. Cook 1 to 2 minutes, stirring occasionally, until mixture starts to simmer and has thickened.   • Bake 40 to 50 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165°F). Serve topped with reserved 2 tablespoons refrigerated glaze and remaining 1 tablespoon green onions.

1 teaspoon salt
1/4 teaspoon pepper
6 boneless skinless chicken breast halves (6 ounces each)
3 tablespoons canola oil
1 cup sugar
2 tablespoons cornstarch
1 teaspoon chicken bouillon granules
1/4 teaspoon ground ginger
1 can (20 ounces) unsweetened sliced pineapple
1/2 cup cider vinegar
1 tablespoon soy sauce
1 medium green pepper, cut into rings
Hot cooked rice

Steps:

  • In a large resealable plastic bag, combine the flour, salt and pepper. Add chicken, one piece, at a time, and shake to coat. In a skillet, brown chicken in oil. Transfer to a greased 13x9-in. baking dish., In a small saucepan, combine the sugar, cornstarch, bouillon and ginger. Drain pineapple into a 2-cup measuring cup; set pineapple aside. Add enough cold water to juice to measure 1-1/4 cups. Stir in vinegar and soy sauce. Gradually whisk into sugar mixture. To use, partially thaw in refrigerator overnight. Heat through slowly in a covered skillet until a thermometer inserted in chicken reads 165°, stirring occasionally.
