Steps:
- Use the refrigerated pre-mixed dough for No-Knead Flatbreads Recipe #387518.
- Prepare 2 large baking sheet pans with parchment or Silpats, set aside.
- Preheat oven to 400 degrees F.
- Remove the Olive Oil Flatbread dough (Recipe #387518) from the refrigerator. Lighly dust the surface with flour and cut off a 1 pound (grapefruit size) piece.
- With lightly floured hands quickly shape dough into a ball by streching the surface of the dough around to the bottom on all four sides, rotating the ball a quarter turn as you go.
- On a lightly floured board, flatten the dough, with hands and rolling pin, into a 1/4 inch thick rectangle, dusting with minimal flour if necessary to keep dough from sticking to the rolling pin. If difficulty is experienced in rolling out the dough, allow it to rest for a few minutes. I've found that pulling the dough with my hands works best.
- Spread the sauce on the dough, then cheese and top with meat, leaving some of the cheese exposed so that it can help hold the roll together as it bakes.
- Starting with the long end roll the dough into a log.
- NOTE: Cut only the number of pieces you want to bake. The rest can be wrapped and stored in the refrigerator for up to 5 days, or can be frozen for up to 2 weeks.
- Using kitchen shears, cut the dough into 1/2 inch pieces.
- Place them on the prepared sheet, leaving plenty of space for them to expand when they bake.
- Bake for 15-18 minutes, or until golden brown and the cheese has melted and caramelized a bit.

- 1. Spray inside of slow cooker with cooking spray. Place the chicken wings inside. slow cooker. 2. In medium bowl, mix all the remaining ingredients until well combined. 3. Taste the sauce. Adjust flavors to suit your preference, if needed. 4. Pour sauce over wings. Adjust temperature on slow cooker to low. 5. Cook chicken wings for about 3-4 hrs (if wings are frozen). 6. Place the wings in a preheated oven (400 degrees) for 20 min. Serve.
HAWAIIAN BBQ CHICKEN QUESADILLAS
I happen to love those BBQ chicken pizzas, especially with a little pineapple on top. So here's a lunch time creation when pizza dough or bread was not an option. Quick and so good! If I cook chicken for this I boil a chicken breast (can be frozen to begin with, just drop it in the water). After about 15-20 minutes just cut open the chicken to see if it is cooked all the way through and ready to use. If the chicken breast is defrosted it takes much less time, but time is estimated. I would encourage others to change this recipe up to create other pizza favorites making a pepperoni quesadilla, meat lovers, hawaiian, chicken alfredo, etc. Get creative! Pizza anyone?

- Start to heat up a skillet on the stove because this won't take long.
- Take flour tortilla and sprinkle half of it with cheese and 1/4 of cooked chicken.
- Add bacon bits and a little bit of crushed pineapple (no juice) if desired. Pour a little bit of BBQ sauce on top. Don't be too generous with the sauce or it will seep out of the quesadilla.
- Spray the pan with cooking spray. Fold the tortilla in half and place in pan. It only takes a few short minutes to brown one side and then flip over to brown the other side.
- When done, cut into wedges and serve with added BBQ sauce if you like to dip.

- Marinate the chicken thighs with the rest of the ingredients except the BBQ sauce (if using) for 30 minutes or up to overnight. Reserve some of the marinade for basting.
- Cook chicken thighs smooth-side down on a hot grill until grill marks show, about 3 minutes. Turn and cook until grill marks show on the other side, about 5 minutes.
- Keep cooking, turning over every 2 minutes, about 10 to 12 minutes.
- When chicken is almost finished cooking, brush with reserved marinade mixed with the *BBQ sauce if using, *when I use the BBQ sauce I go about half marinade, half BBQ sauce, measurements are approximate.
- Top with chopped cilantro and serve with grilled pineapple slices over rice.

- Preheat grill to high heat.
- Drain juice from pineapple slices into a small mixing bowl.
- Whisk in barbecue sauce, minced garlic, and soy sauce; set aside.
- Place 6 pieces of foil (approx. 12"x18") on a clean working surface and spray with nonstick cooking spray.
- Place a chicken breast in the center of each piece of foil.
- Divide pineapple slices, peppers and green onions evenly on top of each chicken breast.
