Beer and Brown Sugar Steak Marinade image

I concocted this marinade on a lark and it turned out great. The flavors complement and do not overwhelm the natural taste of beef.

Time 1h10m

Yield 4

Number Of Ingredients 7

2 (16 ounce) beef sirloin steaks
¼ cup dark beer
2 tablespoons teriyaki sauce
2 tablespoons brown sugar
½ teaspoon seasoned salt
½ teaspoon black pepper
½ teaspoon garlic powder

Steps:

  • Preheat grill for high heat.
  • Use a fork to poke holes all over the surface of the steaks, and place steaks in a large baking dish. In a bowl, mix together beer, teriyaki sauce, and brown sugar. Pour sauce over steaks, and let sit about 5 minutes. Sprinkle with 1/2 the seasoned salt, pepper, and garlic powder; set aside for 10 minutes. Turn steaks over, sprinkle with remaining seasoned salt, pepper, and garlic powder, and continue marinating for 10 more minutes.
  • Remove steaks from marinade. Pour marinade into a small saucepan, bring to a boil, and cook for several minutes.
  • Lightly oil the grill grate. Grill steaks for 7 minutes per side, or to desired doneness. During the last few minutes of grilling, baste steaks with boiled marinade to enhance the flavor and ensure juiciness.

BEER-MARINATED STEAKS WITH PEPPERCORN SAUCE

Beer-Marinated Steaks with Peppercorn Sauce image

Categories     Beef     Summer     Grill/Barbecue     Bon Appétit

Yield Makes 6 servings

Number Of Ingredients 18

6 12-ounce top loin (New York strip) steaks
1 12-ounce bottle of dark beer
1/2 cup (packed) dark brown sugar
5 tablespoons fresh lime juice
3 tablespoons minced red onion
6 garlic cloves, chopped
2 tablespoons Worcestershire sauce
2 tablespoons whole grain mustard
2 tablespoons olive oil
1 tablespoon minced peeled fresh ginger
1/2 teaspoon hot pepper sauce
1/2 cup white wine
1 shallot, finely chopped
2 tablespoons coarsely crushed four-peppercorn mix*
1 3/4 cups chicken stock or canned low-salt chicken broth
1 3/4 cups beef stock or canned beef broth
1/2 cup whipping cream
*A blend of black, white, pink and green peppercorns found in the spice section of many supermarkets.

Steps:

  • Place steaks in single layer in glass baking dish. Whisk beer, sugar, lime juice, onion, garlic, Worcestershire sauce, mustard, oil, ginger and hot pepper sauce in large bowl to blend. Pour marinade over steaks in baking dish. Cover tightly with plastic wrap and refrigerate overnight.
  • Bring white wine, chopped shallot and crushed peppercorns to boil in heavy medium saucepan; simmer until mixture is reduced by half, about 5 minutes. Add chicken stock and beef stock and boil until reduced to 2 cups, about 25 minutes. Add whipping cream and cook until sauce coats spoon, about 6 minutes. (Peppercorn sauce can be made up to 2 hours ahead. Set aside at room temperature.)
  • Prepare barbecue (medium-high heat). Remove steaks from marinade and grill to desired doneness, about 4 minutes per side for medium-rare. Transfer steaks to plates. Meanwhile, bring peppercorn sauce to simmer. Drizzle sauce over steaks.

Tips:

  • For the best flavor, choose a high-quality steak. Look for steaks that are well-marbled and have a deep red color.
  • Be sure to tenderize the steak before marinating it. This will help the marinade penetrate the meat and make it more flavorful.
  • Use a flavorful marinade. There are many different marinade recipes available, so choose one that you think will complement the flavor of the steak.
  • Marinate the steak for at least 30 minutes, but no longer than 24 hours. Over-marinating the steak can make it tough.
  • When you're ready to cook the steak, be sure to bring it to room temperature before grilling or pan-frying it. This will help the steak cook evenly.
  • Cook the steak over medium-high heat until it reaches your desired doneness. Be sure to let the steak rest for a few minutes before serving.

Conclusion:

Marinating steak is a great way to add flavor and tenderness to the meat. By following the tips above, you can create a delicious and flavorful steak that your friends and family will love. So next time you're looking for a great steak recipe, be sure to try one of the marinades from this article.
