Time 1h

Yield 6 servings

Number Of Ingredients 6

6 medium sweet potatoes
6 tablespoons salted butter, at room temperature
1/4 cup brown sugar
1 teaspoon ground cinnamon
Kosher salt and freshly ground black pepper
Fresh sage and rosemary sprigs, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Place a potato between the handles of 2 wooden spoons or chopsticks. Slice the potato into thin slices, leaving 1/4 inch at the bottom unsliced; the spoons or chopsticks will prevent you slicing all the way through. Repeat with the remaining potatoes.
  • Mix together the butter, brown sugar and cinnamon with a pinch of salt and pepper in a small bowl.
  • Place the sweet potatoes on a baking sheet. Using a spatula, spread the butter mixture all over the potatoes. Bake until tender and golden, 40 to 45 minutes. Transfer to a platter and garnish with the sage and rosemary.

With just the right amount of sweetness and spice, these sweet potatoes are cooked on the stovetop until they are tender, freeing up valuable oven space at your holiday meal.

Categories     side-dish

Time 50m

Yield 8 servings

Number Of Ingredients 7

4 pounds sweet potatoes (about 8 medium), peeled
6 tablespoons unsalted butter
1/2 cup firmly-packed dark brown sugar
1/3 cup granulated sugar
1 teaspoon pumpkin pie spice
1/2 teaspoon kosher salt, plus more to taste
1/4 cup pecans

Steps:

  • Cut the sweet potatoes crosswise into 1-inch-thick rounds. Halve or quarter any extra-large pieces so that they are all similar in size.
  • Melt the butter in a large Dutch oven over medium heat. Combine the brown sugar, granulated sugar, pumpkin pie spice and salt in a small bowl. Add the sugar mixture to the Dutch oven and whisk until it forms a paste. Add the potatoes and stir well, spooning the sugar mixture over the potatoes to coat evenly.
  • Cover and cook the potatoes, stirring occasionally and gently to avoid breaking them up, until they are just tender when pierced with the tip of a knife and the sauce resembles a thin syrup, 25 to 30 minutes.
  • Meanwhile, preheat the oven to 350 degrees F. Spread the pecans on a baking sheet and toast until dark brown with a light scent of roasted nuts, about 8 minutes. Season the pecans with some salt while warm, let them cool completely and coarsely chop.
  • Transfer the potatoes with their sauce to a large serving platter and sprinkle the pecans over the top.

Tips:

  • Choose the right yams: Select firm and evenly shaped yams without blemishes or bruises. Look for yams with deep orange flesh, as they are sweeter and have a richer flavor.
  • Use a sharp knife: A sharp knife will make it easier to create clean and even slices in the yams. Carefully slice the yams, making sure not to cut all the way through.
  • Don't overcrowd the pan: When roasting the yams, make sure not to overcrowd the pan. This will ensure that the yams cook evenly and get crispy edges.
  • Baste the yams: Basting the yams with the melted butter and brown sugar mixture during roasting helps to caramelize the yams and add extra flavor.
  • Use a candy thermometer: If you want to make sure the yams are cooked to perfection, use a candy thermometer to check the internal temperature. The yams are done when they reach an internal temperature of 205°F (96°C).

Conclusion:

Hasselback candied yams are a delicious and easy-to-make side dish that is perfect for any occasion. With their sweet and caramelized flavor, these yams are sure to be a hit with your family and friends. So next time you're looking for a special side dish, give this recipe a try!
