1 small onion, diced

1/2 onion chopped
1/2 green pepper chopped
1 lbs. sausage or ham (cooked (could also use bacon or smoked sausage or any meat you like))

3/4 cups shredded cheddar cheese

8 ounces ground pork sausage
1 sweet onion, diced (2 cups)
1 poblano chile, seeded and chopped (1 cup)
1 red bell pepper, seeded and chopped (1 cup)
1 ½ teaspoons kosher salt, divided
2 cups refrigerated diced potatoes (such as Simply Potatoes)
¾ teaspoon garlic powder
4 ounces Gruyère cheese, shredded (about 1 cup), divided
4 ounces extra-sharp Cheddar cheese, shredded (about 1 cup), divided
5 large eggs
¼ cup heavy whipping cream
1 tablespoon minced fresh chives

Steps:

  • Preheat oven to 425°F with oven rack about 6 inches from heat. Heat 1 tablespoon of the olive oil in a 10-inch cast-iron skillet over medium-high. Add sausage. 2 (16 ounce) packages frozen shredded hash browns (thawed)
2 lbs bulk pork sausage
2 tablespoons flour
2 -3 cups whole milk (depending on how thick you like the gravy)
1 1/2 cups of shredded sharp cheddar cheese
1/4 cup chopped green onion (to garnish) (optional)

Steps:

  • Crumble and cook sausage in a large frying pan until no longer pink.
  • (do not drain).
  • Add 2 tablespoons flour and stir into sausage mixture, let it cook for one minute.
  • Slowly add milk and bring to a boil.
  • Let cook for 10 minutes until thickened to desired consistency.
  • Add salt and pepper to taste.
  • Meanwhile put both packages of thawed hashbrowns into a 9 x 13 glass dish.

1 pkg country gravy mix (makes 2 cups)
4 c frozen diced potatoes, defrosted
1 Tbsp vegetable oil
1 lb mild country sausage, browned & crumbled
2 large eggs, beaten
1-1/2 c shredded cheddar cheese

  • 1. Prepare the sausage gravy according to package directions. Take off the heat to cool. (Be sure the mix makes 2 Cups of gravy)
  • 2. Heat oil in large skillet; brown potatoes, stirring frequently to get a nice golden brown.
  • 3. Brown the sausage well and break up into small pieces; drain well.
  • 4. In 9X13" pan place potatoes; sprinkle the sausage over the potatoes;

⅓ cup vegetable oil
