4 boneless skinless chicken breasts
4 teaspoons Dijon mustard (i use grey poupon)
1 teaspoon garlic salt
1/4 teaspoon salt and pepper
2 cups hash browns (i use the simply potatoes brand by the lunch meat section of my grocery store...in a green bag)
1 tablespoon olive oil

Steps:

  • Heat a large skillet on medium high heat and add oil to your pan.
  • Sprinkle salt and pepper evenly on all chicken breasts. Spread 1 tsp of mustard on each chicken breast.
  • Next mix your hashbrowns with the garlic salt.
  • Top each breast mustard side up with hashbrowns and press down to make sure the hashbrowns stay on the chicken breasts.
  • Add each chicken breast hashbrown side down to your hot pan. Cook for 5 minutes without touching the chicken. As soon as you see the sides of the hashbrowns turning a golden color carefully flip the chicken breasts over. Continue to cook for an additional 3 minutes.
  • Turn your heat down to low, cover and cook the chicken for 10 minutes or until the chicken is fully cooked and no longer pink.

1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
2 teaspoons chicken bouillon granules

2 tablespoons finely chopped sweet red pepper
1 garlic clove, minced

1/4 cup sliced almonds

  • Preheat oven to 350°. Spread potatoes in an ungreased 13-in. x 9-in. baking dish. Sprinkle with salt and pepper. Sprinkle chicken and mushrooms over the top. ½ cup all purpose flour
2 eggs
⅔ cup seasoned Italian bread crumbs (I use Progresso)
⅓ cup freshly grated Parmigiano-Reggiano cheese
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
1 tablespoon finely chopped fresh herbs, such as thyme, parsley, chives or rosemary
3-4 boneless skinless chicken breasts (about 1½ pounds), pounded ¼"-thick (see note)
Salt and freshly ground black pepper
¼ cup olive oil
Lemon wedges, for serving

Steps:

  • Set up three large shallow bowls in an assembly line. Put the flour in the first bowl; beat the eggs in the second bowl; and mix the bread crumbs, Parmesan cheese, salt, pepper, and chopped fresh herbs in the third bowl.
  • Season chicken breasts with salt and pepper. Dredge the first chicken breast in the flour and shake off the excess until just a light coating remains. Next, dip the chicken in the egg mixture and turn to coat evenly, letting any excess egg drip off. Finally, dredge the chicken in the bread crumb mixture, turning a few times to coat well. Set breaded chicken on a plate and repeat until all of the chicken breasts are breaded.
  • Heat the oil in a large sauté pan over medium heat. When the oil is hot, add the chicken breasts to the pan and cook for 2 to 3 minutes until the first side is golden brown. Flip and continue cooking until done, 2 to 3 minutes longer. Serve immediately with lemon wedges.
  • Note: If chicken breasts are large (8 or more ounces), it's best to cut them in half once they are pounded out. Alternatively, you can cut them in half horizontally before pounding.

2 cups cheese flavored crackers (such as Cheez-It®), crushed
1 cup French-fried onions, crushed
½ cup Italian bread crumbs
2 teaspoons sesame seed, toasted
salt and ground black pepper to taste
4 skinless, boneless chicken breast halves - cut in half
3 tablespoons mayonnaise

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Spray a baking dish with cooking spray.
  • Mix cheese-flavored crackers, French-fried onions, Italian bread crumbs, sesame seeds, salt, and pepper in a bowl. Set aside.

2 cups shredded triple cheddar cheese, divided use
1 1/2 tablespoons seasoning salt

  • Preheat oven to 375 degrees F. Rinse chicken breasts and pat dry. Remove any excess fat.
  • Using a sharp knife, cut a large pocket into the chicken breasts, cutting horizontally and lengthwise into the chicken, but not cutting through the back or sides.

2 skin-on, bone-in chicken breasts, cut airline-style, tenderloins removed
Salt and freshly ground black pepper
1 cup dry white wine
1 clove garlic, minced
1 tablespoon minced fresh thyme leaves
1 teaspoon chopped fresh rosemary leaves
1 teaspoon chopped fresh parsley leaves
2 tablespoons butter, unsalted
1 tablespoon minced fresh chives
Potato-Vegetable Hash, recipe follows
1 Idaho potato
1 zucchini
1 squash
1 small red onion, thinly sliced
1 egg, beaten
2 tablespoons all-purpose flour
1 clove garlic, minced
1 teaspoon minced fresh thyme leaves
1 teaspoon minced fresh tarragon leaves
1 teaspoon Cajun spice
Grapeseed oil
Salt

Steps:

  • Heat a large saute pan over high heat and add the oil. Season both sides of chicken breast with salt and pepper, to taste. Sear the chicken, skin side down, 4 to 5 minutes. Reduce the heat to medium, flip the chicken, cover the pan and cook on second side for 7 to 8 minutes.
  • After second side has been cooked, add the wine, garlic, and herbs and continue to cook until the liquid is reduced by half.
  • Transfer the chicken to a serving platter and allow it to rest.
  • Remove the pan from the heat and whisk in the butter, scraping up the bits from the bottom of the pan.
  • Serve the chicken with Potato-Vegetable Hash and the pan sauce. Garnish with chives.
  • Using a box grater, shred the potato, zucchini and squash, and add them to a large bowl.
  • Stir in the onion, egg, flour, garlic, herbs, and Cajun spice. Blend well. Add more flour if mixture is too wet. The mixture should hold its shape when squeezed.
  • Heat a large saute pan over medium heat. Add 2 tablespoons grapeseed oil. Portion the hash into 2 cakes, then gently put them in the pan. Cook until golden brown, about 2 to 3 minutes, then flip and cook until the other side is browned. Remove them from the pan to a paper towel and season with salt, to taste. Serve warm.

5 c frozen hashbrowns, thawed
1 can(s) cream of mushroom soup
1 c shredded cheddar cheese
1/4 c chopped onion
1 c broccoli florets
1/2 stick butter, melted
salt and pepper

  • 1. Preheat oven to 400 and butter a 9 x 9 baking dish.
  • 2. Mix thawed hashbrowns, soup, 3/4 cup of the cheese, onion, broccoli and melted butter. Spread in baking dish.

4 boneless skinless chicken breast halves, trimmed
2 teaspoons jarred minced garlic
3/4 teaspoon salt, divided
1/2 teaspoon dried thyme
1 large onion, peeled and diced
2 eggs
1 cup all purpose flour, divided
2-3 Idaho or russet potatoes, peeled (do not use frozen shredded potatoes)
oil for frying

  • Place chicken breasts 3 inches apart between two sheets of plastic wrap or wax paper. Pound to even thickness of 1/3-inch. Rub chicken with garlic, then sprinkle with 1/4 teaspoon salt, 1/4 teaspoon pepper and thyme.Puree onion, eggs and 1/2 cup flour in blender or food processor fitted with steel blade. Shred potatoes using large holes of box grater or with food processor coarse shredding disk. Add potatoes to onion mixture. Season with remaining 1/2 teaspoon salt and remaining 1/4 teaspoon pepper.Pour 1-1/2 inches Crisco Oil into deep fryer. Heat oil to 375°F. Dust chicken breasts with remaining 1/2 cup flour. Shake off any excess over sink or garbage can.Coat both sides of chicken with 1/3-inch of potato mixture. Slide chicken gently into oil using wide spatula.Fry for 5 to 6 minutes, or until bottom is brown. Turn gently with spatula. Fry second side. Remove from pan. Drain on paper towels and serve immediately.Note: The chicken breasts can be pounded and seasoned up to 1 day in advance and refrigerated, tightly covered with plastic wrap. The potato mixture can be made up to 3 hours in advance. Refrigerate it with sheet of plastic wrap pushed directly into surface to prevent discoloration.
