SLOW COOKER FUNERAL POTATOES (HASH BROWN CASSEROLE)
The hash brown casserole (aka funeral potatoes) have always been a food day favorite at my work but the topic came up and I discovered that my husband had never had it. I needed my oven for other things so I came up with this slow cooker version. I also chose to use potato chips over the traditional cereal topping but either will work.

Tips:
- Shred your own potatoes. Pre-shredded potatoes can be dry and starchy, which will result in a less flavorful casserole. Shredding your own potatoes ensures that they are fresh and moist, which will give your casserole a better texture and flavor.
- Use a variety of cheeses. Cheddar cheese is a classic choice for hash brown casserole, but you can also use other types of cheese, such as mozzarella, Parmesan, or Gruyère. Using a variety of cheeses will give your casserole a more complex flavor.
- Add some vegetables. Diced onions, peppers, or mushrooms are all great additions to hash brown casserole. Vegetables will add flavor, texture, and nutrients to your dish.
- Don't overcook the potatoes. The potatoes should be cooked through, but they should still be slightly firm. Overcooked potatoes will become mushy and ruin the texture of your casserole.
- Let the casserole rest before serving. This will allow the flavors to meld and the casserole to firm up. Letting the casserole rest will also make it easier to slice and serve.
Conclusion:
Hash brown casserole is a delicious and easy-to-make dish that is perfect for breakfast, lunch, or dinner. It is a versatile dish that can be easily customized to your liking. With a few simple tips, you can make a hash brown casserole that is sure to be a hit with your family and friends.
