3 lb pork loin roast
1/2 c salt
1/4 c olive oil
3 clove garlic
1 lemon
1 tsp oregano, rosemary
salt and pepper
1 Tbsp worchesteshire sauce
1/2 c white wine

Steps:

  • 1. Place roast in a large deep pan. Dissolve 1/2 c salt in a quart of water. Pour over roast and add enough more water to cover. Place in the fridge for about 7 hours.
  • 2. Remove roast and dry. Place everything but the Worchesteshire sauce in a plastic bag. Place the roast inside, seal, and marinate for 2 hours (more is fine).
  • 3. Remove roast and place in heated and oiled sauce pan and sear on all sides well. When done, take a roasting pan and line with foil. Place roast in the middle, sprinkle the Worchesteshire sauce over, and 1/2 c white wine. Seal tightly with more foil.
  • 4. Place in 400 degree oven for 2 hours or until temperature reaches 140. Take out and remove from the pan to a dish, cover and let rest for 30 minutes. Place all juices in the saute pan to make gravy.

1/4 cup pomegranate juice
1/4 cup sugar
1 tablespoon salt
1 tablespoon garlic salt
1 tablespoon steak seasoning
1 teaspoon black pepper
1 pork roast, any type (4 to 5 pounds)
2 pears, cored, peeled and sliced thick

Steps:

  • Combine pomegranate juice and sugar in small saucepan. Cook over low heat, stirring until sugar dissolves, about 2 minutes. Pour into 4 1/2-quart CROCK-POT® slow cooker. Blend salt, garlic salt, steak seasoning and pepper in small mixing bowl. Rub mixture over roast. Place roast in CROCK-POT® slow cooker. Turn roast to cover with juice mixture. Top roast with pear and orange slices. Cover; cook on HIGH 6 to 8 hours or until tender. Serve with juice and fruit slices. This recipe really requires a good thermometer -- either a $10 instant-read type or, even better, the type that pierces the meat and stays in place while connected to an outside-the-oven monitor. If you can swing that, then try your favorite marinade or rub on this recipe. Use your imagination on the rubs and marinades, but ensure you bring your roast directly from the fridge to the roasting pan -- Dad's recipe works best that way.

1 teaspoon kosher salt
1 tablespoon ground black pepper
1 (3 pound) boneless top loin pork roast

Steps:

  • Combine oil, pepper, and salt in a bowl; rub oil mixture over pork and refrigerate while oven preheats.
  • Preheat an oven to 475 degrees F (245 degrees C).
  • Place a roasting rack in a large roasting pan; arrange pork on the roasting rack.
  • Roast in preheated oven until pork with browned, about 30 minutes. Remove pork from oven and reduce oven heat to 325 degrees F (165 degrees C). Allow pork to rest uncovered at room temperature for 30 minutes. After trying a Swedish Pot Roast recipe that was outstanding I thought about using some of the same ingredients to do a pork loin. Here is the result.

4-5 lb pork loin, bone in or boneless
1 tsp freshly grated nutmeg
1 tsp cinnamon
1/2 tsp ginger, ground
1/2 tsp freshly ground black pepper
2 tsp kosher salt
3 Tbsp canola oil
4 bay leaves
3 medium onions, sliced
3 medium apples, cored, peeled and sliced
1 c raisins or pitted prunes, cut in half
3 clove garlic, coarsely chopped
3/4 c brown sugar, firmly packed
3/4 c zinfandel wine
1 1/2 c water
cornstarch for thickening sauce if desired
1 c sour cream

Steps:

  • 1. Blend nutmeg, cinnamon, ginger, salt, and pepper together and rub over entire roast. Brown the meat on all sides in the oil at medium-high heat.
  • 2. Add all remaining ingredients (except cornstarch and sour cream) to the pot. If cooking on top of the stove, cover and simmer for about 4 hours until very tender or place your Dutch oven in the oven at 300-degrees for about 5 hours.
  • 3. Remove the meat and bay leaves from the pot and thicken the gravy with some cornstarch mixed in a small amount of water; stir in sour cream. Serve with wide noodles.

1 ½ pounds boneless pork, cut into 1/2-inch cubes
2 cloves garlic, minced
1 medium onion, chopped
3 cups chicken broth
½ teaspoon salt
¼ teaspoon dried rosemary, crushed
¼ teaspoon rubbed sage
1 bay leaf
3 cups frozen, cubed butternut squash
2 MacIntosh apples, cored and cubed
2 large potatoes, peeled and cubed
2 cups carrots, peeled and diced

Steps:

  • Melt the butter in a large skillet over medium-high heat. Add the pork and cook until lightly browned on all sides. Stir in the garlic and onion, and continue to cook until the onion has softened, and the pork is firm, and no longer pink, about 5 minutes.
