1/2 acorn squash (steamed, seeded, cooled and peeled)
2/3 cup pumpkin (unsweetened)
1 golden delicious apple, unpeeled and cored
2 raw carrots, chopped (do not peel)
1 cup low-fat vanilla yogurt
2/3 cup apple juice (unsweetened)
2 tablespoons pumpkin pie spice (or your own combination of cinnamon, nutmeg, allspice and ginger)
2 tablespoons dark brown sugar
2 tablespoons honey

Steps:

  • Chop up steamed squash into cubes
  • (To steam the squash quickly, cut the acorn squash in half. Remove seeds. Place in a microwave safe bowl upside down -so the inside of the squash is facing DOWN. Add about 1 inch of water to dish. Microwave on high for 12-15 minutes until skin peels right off the squash and it is soft to touch).
  • Add squash, carrot chunks, apple juice and apple to blender/smoothie maker. Completely puree to a smooth creamy texture.
  • Add pumpkin, yogurt, spices, honey and brown sugar to mixture. Blend until smooth.
  • Serve with a little whipped topping chilled in a glass, or serve hot as a "pumpkin soup".

1 pound macaroni such as cassarecci, strozzopretti or ziti with lines
2 tablespoons extra-virgin olive oil
1 medium onion, finely chopped
3 cloves garlic, finely chopped
2 tablespoons fresh thyme, finely chopped
3 tablespoons butter
3 tablespoons all-purpose four
1 cup chicken stock
1 1/2 cups whole milk
Salt and freshly ground black pepper
Nutmeg, grated to taste
1 (10-ounce) box frozen butternut squash, defrosted
A few dashes hot sauce
1 cup grated Parmigiano-Reggiano
1 cup extra-sharp yellow Cheddar
A handful fresh parsley leaves, finely chopped
1 teaspoon sweet paprika

Steps:

  • Bring water to a boil, season with salt and cook macaroni to al dente.
  • Preheat broiler and place rack in middle of the oven.
  • Heat the extra-virgin olive oil in a sauce pot over medium heat, saute onions and garlic until soft, 6 to 7 minutes and stir in the thyme.
  • Scoot onions off to side of pan and melt butter, whisk flour into butter and combine whisk 1 minute then whisk in stock and milk, season sauce with salt, pepper and nutmeg, and cook until thickened, about 3 to 4 minutes.
  • Stir in butternut squash and a few dashes hot sauce. Reduce heat. When sauce comes to a bubble, stir in Parmigiano. Combine the sauce and macaroni, transfer to a flameproof casserole dish and top with shredded yellow Cheddar, chopped parsley and paprika. Brown the macaroni under broiler, 4 to 5 minutes until brown and bubbly.

Simple Syrup, recipe follows
Crushed graham crackers, for the rim
2 ounces vodka
1 1/2 ounces Granny Smith apple juice
1/8 teaspoon pumpkin spice
1/2 ounce pumpkin beer, or more as necessary
1/2 cup sugar

Steps:

  • Put some simple syrup in one saucer and some crushed graham crackers in another. Dip the rim of a martini glass into the simple syrup and then into the crushed graham crackers. Set aside.
  • Add ice to a cocktail shaker. Add the vodka, apple juice, pumpkin spice and 1/2 ounce simple syrup; shake well. Strain into the prepped martini glass. Top off with the pumpkin beer to just below the graham cracker rim.
  • Combine the sugar with 1/2 cup water in a small saucepan and bring to a light simmer. Cook until the sugar is dissolved, then remove from the heat and let cool completely.

1 tablespoon Worcestershire sauce

8 frozen boneless skinless chicken breasts

8 ounces bacon, cooked crisp, coarsely chopped (1 cup)

Steps:

  • Preheat oven to 375.
