1 lb good quality sausage meat
1 -2 tablespoon harissa, more if you want it spicier
1 small red onion, very finely chopped
1 clove garlic, crushed
2 tablespoons finely chopped flat leaf parsley (or a mix of coriander and parsley)
1 tablespoon chopped chives
2 tablespoons olive oil
lemon slice, to serve

Steps:

  • In a bowl mix the sausage meat with the all the other ingredients, except the olive oil.
  • Shape into 8 patties, it might be sticky, flour your hands if it makes it easier.
  • Heat the oil in a frying pan and cook them for 4-5 minutes on each side.
  • If you have to do this in batches, use half the oil for the first batch and keep the patties warm whilst you fry the others.

5 slices bacon
1 clove garlic, minced
1 pound ground pork
Kosher salt and freshly ground pepper
1/4 teaspoon dried rubbed sage
Freshly ground pepper
4 potato buns, split
Unsalted butter, softened, for spreading
Coleslaw, for topping

Steps:

  • Pulse the bacon and garlic in a food processor until coarsely ground.
  • Combine the ground pork, 1 teaspoon salt, 1/4 teaspoon pepper and the sage in a large bowl. Add the bacon mixture and gently mix with your hands. Gently form the meat into 4 balls, then lightly press into 4-inch-wide, 1-inch-thick patties. Make a 2-inch-wide indentation in the center of each with your thumb to prevent the burgers from bulging when grilled.
  • Preheat a grill to medium high. Season the patties with pepper. Grill, undisturbed, until marked on the bottom, 5 to 6 minutes. Turn and grill until the other side is marked and the patties feel firm, 4 to 6 more minutes. Meanwhile, spread the cut sides of the buns with butter and toast on the grill.
  • Serve the patties on the buns; top with coleslaw.

250g pouch mixed grains (or 250g cooked mixed grains)
500g lean turkey breast mince
2 large garlic cloves , finely grated
1 tsp coriander seeds , toasted and crushed
4 tbsp rose harissa
small bunch parsley , finely chopped
2 red peppers
150g rocket
2 tbsp rapeseed oil
1 lemon , juiced
3 cooked beetroot , grated
4 wholemeal seeded buns , toasted, to serve
1 medium courgette
½ small bunch dill , finely chopped
4 tbsp fat-free Greek yogurt
2 tbsp low-fat mayonnaise

Steps:

  • Cook the grains according to pack instructions. Leave to cool, then tip into a bowl and use your hands to mix in the turkey, garlic, coriander, harissa and parsley. Shape into four patties. Cover and chill.
  • To make the sauce, coarsely grate the courgette, discarding the seeds, then wrap in a clean cloth and squeeze out any liquid. Put in a bowl and mix with the dill, yogurt, 2 tbsp water and the mayonnaise.
  • Put the peppers on the barbecue and cook for 10-15 mins or until blistered and starting to char. Or, heat a grill to its highest setting and grill for 15-20 mins, turning halfway. Leave to cool a little, then peel and cut into strips.
  • Toss the rocket with half the oil and lemon juice.
  • Brush the burgers with the remaining oil and cook for 6 mins each side. Alternatively, heat the oil in a frying pan over a medium heat and fry for 6 mins each side. Serve with the sauce, peppers, beetroot, buns and salad so everyone can assemble their own burger.

10 ounces harissa (North African chili sauce; about 1 1/4 cups)
1 bunch fresh thyme leaves, roughly chopped (1/4 cup)
1/4 cup fresh lemon zest, plus 1/3 cup lemon juice (from 3 lemons)
1/3 cup red-wine vinegar
1/2 cup coarse salt
2 tablespoons paprika
1 1/2 tablespoons freshly ground pepper
1 skin-on, bone-in pork picnic shoulder (about 11 pounds), butterflied
Harissa-Spiced Barbecue Sauce

Steps:

  • Mix together harissa, thyme, lemon zest and juice, and vinegar for marinade.
  • Mix salt, paprika, and pepper for dry rub. Stir 1 tablespoon dry rub into marinade. Place pork, skin side down, in a large roasting pan; pour marinade over pork. Flip pork; with a sharp knife, score skin (but not meat) in a diamond pattern at 1/2-inch intervals. Pat remaining dry rub over skin. Cover, and refrigerate at least 8 hours and up to 1 day. Bring to room temperature before roasting, 1 to 2 hours.
  • Preheat oven to 325 degrees. Cover pan with parchment-lined foil, and roast pork until fork-tender, about 5 hours. Remove foil from pan, and roast 30 minutes more. Raise temperature to 425 degrees, and roast until skin is deep brown and crisp, about 45 minutes. Remove from oven, and tent with foil. Let rest 45 minutes before carving. Serve with harissa-spice barbecue sauce.
