Yield Makes 6 servings

Number Of Ingredients 4

1 1/2 pounds haricots verts or other thin green beans, trimmed
4 bacon slices
1 tablespoon unsalted butter
1 cup bottled peeled roasted whole chestnuts, coarsely crumbled

Steps:

  • Cook beans in a medium pot of boiling salted water (2 tablespoons salt for 4 quarts water), uncovered, until crisp-tender, 4 to 6 minutes. Drain and plunge into an ice bath to stop cooking. Drain well and pat dry.
  • Cook bacon in a large heavy skillet over medium heat until crisp. Drain on paper towels, reserving fat in skillet, then crumble. Add butter to fat in skillet along with beans, chestnuts, bacon, and 1/4 teaspoon each of salt and pepper. Cook, stirring frequently, until heated through, 2 to 3 minutes.

Tips:

  • Choose fresh, tender green beans. Look for beans that are bright green and snap easily when you bend them.
  • Trim the green beans before cooking. Cut off the ends of the beans and any tough strings.
  • Cook the green beans until they are crisp-tender. You don't want them to be too soft or mushy.
  • Make the bacon dressing while the green beans are cooking. This will give the flavors time to meld.
  • Use high-quality goat cheese. This will make a big difference in the flavor of the dish.
  • Serve the green beans warm or at room temperature. They are also delicious chilled.

Conclusion:

Haricots verts with goat cheese and warm bacon dressing is a delicious and elegant side dish that is perfect for any occasion. It is easy to make and can be prepared ahead of time, making it a great option for busy weeknights. The combination of crisp green beans, creamy goat cheese, and savory bacon dressing is sure to please everyone at the table.
