Yield 8 servings

Number Of Ingredients 7

5 tablespoons unsalted butter, softened
3 tablespoons finely chopped shallots
3 tablespoons finely chopped flat-leaf parsley
2 teaspoons finely chopped tarragon
1 1/2 teaspoons grated lemon zest
1 tablespoon fresh lemon juice
2 lb haricots verts or other green beans, trimmed

Steps:

  • Stir together all ingredients except haricots verts with 3/4 teaspoon salt and 1/4 teaspoon pepper in a large bowl until combined well.
  • Cook beans in a large pot of boiling salted water (1 tablespoon salt for 6 quarts water), uncovered, until crisp-tender, about 6 minutes, then drain. Toss with herb butter.
  • Do Ahead
  • Herb butter can be made ahead and chilled, covered, 3 days or frozen, rolled into a cylinder in plastic wrap and kept in a sealed bag, 1 week. Haricots verts can be trimmed 1 day ahead and chilled in a sealed bag lined with paper towels.

Tips:

  • Choose the freshest haricot verts possible. Look for beans that are bright green and crisp. Avoid beans that are wilted or have brown spots.
  • Trim the haricot verts before cooking. Cut off the ends of the beans, where the stem meets the pod.
  • Blanch the haricot verts before sautéing them. This will help them retain their color and crispness. To blanch the beans, bring a large pot of salted water to a boil. Add the beans and cook for 2-3 minutes, or until they are bright green and tender-crisp. Drain the beans in a colander and rinse them with cold water.
  • Use good quality bacon. The bacon will add a lot of flavor to the dish, so it's important to use a good quality brand.
  • Cook the bacon until it is crispy. This will help to render out the fat and give the bacon a nice flavor.
  • Use a large skillet to cook the haricot verts. This will help to prevent the beans from overcrowding and steaming instead of sautéing.
  • Sauté the haricot verts until they are tender-crisp. This should take about 5-7 minutes.
  • Season the haricot verts with salt and pepper to taste.

Conclusion:

Haricot verts are a delicious and versatile vegetable that can be enjoyed in many different ways. This recipe for haricot verts with bacon and onions is a classic French dish that is sure to please everyone at your table.
