CUCUMBER TEA SANDWICHES

Cut sandwiches after they are assembled to avoid messy edges and have a cleaner look. I find that extra chopped dill is nice. A nice looking garnish is a half a grape flat side down on a slice of cucumber.

GRANDMA'S CUCUMBER TEA SANDWICHES

Grandma's Cucumber Tea Sandwiches image

My Grandma and her sisters got together every couple of weeks to play bridge. She always made these sandwiches when it was her turn to host--and spent most of the day in the kitchen guarding the refrigerator to keep all the rest of us from stealing them! I changed the bread to whole wheat, as I like it better, but you can use whatever suits you--we also use pumpernickel or rye.

QUICKIE CUCUMBER TEA SANDWICHES

Quickie Cucumber Tea Sandwiches image

One of my favorite tea sandwiches is Ms. Jenny Benedictine's cucumber spread. This is a little twist on that spread. It's got a bit more herbs in it that her original recipe. Great for an afternoon snack or a fancy tea-time tray. Passive time is chill time.

HONEY BANANA TEA SANDWICHES

Honey Banana Tea Sandwiches image

The combination of honey and banana promotes great help with anemia (thanks for that info, Rita!). It also makes a great spread for a tea sandwich! You could use toasted white bread, but I have found that the combo spread on whole wheat bread or pumpernickel is WONDERFUL! It also gives a bit more nutritious value to what you're eating. I don't normally toast the wheat bread for these little treats, but you could. It's also a great recipe to serve to younger tea party guests.

Tips:

  • Choose the freshest cucumbers you can find. This will ensure that your sandwiches are crisp and refreshing.
  • Peel the cucumbers before slicing them. This will help to remove any bitterness from the skin.
  • Slice the cucumbers thinly. This will make them easier to eat and will help them to absorb the flavors of the other ingredients.

  • Use fresh herbs. Fresh herbs, such as dill or chives, can add a lot of flavor to your sandwiches.
  • Serve the sandwiches chilled. This will help to keep them refreshing and crisp.
