4 strips bacon, chopped
1 cup finely chopped pork loin
1 small onion, finely chopped
1 1/2 cups crushed tomatoes
1/2 cup finely chopped mushrooms
2 tablespoons shredded celery root
4 stalks celery, chopped
2 medium carrots, peeled and chopped
Salt and black pepper
3 cups cubed potatoes
1/2 cup chopped Polish sausage
2 tablespoons finely chopped leek
1 teaspoon allspice
1 teaspoon bay leaves
1 teaspoon Hungarian paprika
1 cup diced pickles
3 cloves garlic, finely chopped
1 tablespoon Eastern European seasoning, such as Vegeta, optional
3 tablespoons chopped fresh dill
1 cup heavy cream

Steps:

  • Fill a soup pot with 8 cups water and set on medium-high heat.
  • In a pan, fry the chopped bacon. When it is done, take out and put into the water in the soup pot.
  • In the drippings of the bacon, fry the pork loin and then the onions. When brown, put them into the soup pot and bring to a boil. Add the crushed tomatoes, mushrooms, celery root, celery, carrots and some salt and cook for 15 minutes.
  • Next, add the potatoes, sausage, leeks, allspice, bay leaves and Hungarian paprika and cook for another 15 minutes.
  • Add the pickles, garlic and seasoning if using, and let boil for 10 minutes. Add the dill and heavy cream and season with salt and pepper. Guten Appetit!

Warning this soup is very good and very hearty and will result in a full satisfied stomach. Very good on a cold winter day when running to the market is not an option.

1 lb lean ground beef
1 medium onion
1/4 teaspoon instant minced garlic
2 large carrots
2 cups cabbage leaves
14 ounces diced tomatoes
8 ounces tomato sauce
1 pinch parsley
2 tablespoons beef bouillon powder
1 cup elbow macaroni
1/4 cup frozen peas
1/4 cup frozen corn
3 cups water

Steps:

  • In a frying pan cook ground beef, onions and garlic together.
  • Then thinly slice carrots and cabbage and add to cooked beef mixture fry for an additional 5 minutes over medium heat.
  • Transfer ingredients to a large pot with lid, then add all additional ingredients cover, bring ingredients to a boil over medium heat then reduce to low heat and cook for an additional 2 hours or until all vegetables are fully cooked.

Experts on such nutritional/medical matters explain that its the protein from the tripe and the liquid of the soup medium that stave off the side effects of overindulgence. Theoretically, high-protein chick-peas in soup should have a similar effect.

1 medium onion, chopped (about 1 cup)
2 tablespoons olive oil
3 large garlic cloves, minced (about 1 tablespoon)
1 tablespoon chili powder
1 teaspoon dried oregano (preferably mexican)
2 cups water (or beef or chicken stock)
1 beef bouillon cube (omit if using stock)
1 (19 ounce) can chickpeas, drained
3 tablespoons tomato paste
1 (28 ounce) can tomatoes (optional)
1/2 cup uncooked white rice, cooked as per directions (optional)

Steps:

  • In a saucepan over medium heat, sauté the onion in the olive oil for abour 3 minutes. (add optional bacon here, see note).
  • Stir in the garlic and continue to sauté 2 more minutes. Do not brown the garlic.
  • Stir in chili powder and oregano, sauté an other minute.
  • Add water and bouillon cube (or stock), chick-peas and tomato paste (+can of tomatoes if using).
  • Bring to a simmer and simmer steadily for 15 minutes, stirring occasionally.
  • Meanwhile, cook rice separately.
  • To serve, put a portion of rice in a bowl, then ladle in the hot soup.
  • Notes:.
  • - For extra flavor and texture, you can also fry up a bit of chopped up bacon in the olive oil before adding the onions (keep the bacon fat! (then continue with step 2).
  • -The rice is just an option but is a comforting filler.
  • -Serve on its own or with hot sauce, diced avocado, green onions or cilantro.
