Time 40m

Yield 2 servings

Number Of Ingredients 9

One 1 1/2-pound porterhouse steak
1 teaspoon kosher salt
1 teaspoon freshly cracked black pepper
2 tablespoons vegetable oil
1/4 cup sour cream
3 tablespoons mayonnaise
2 tablespoons prepared horseradish
1 teaspoon Worcestershire sauce
2 tablespoons fresh parsley, chopped

Steps:

  • Heat a grill or grill pan to medium-high heat.
  • Sprinkle the steak on both sides with salt and pepper. Brush the grill grates with oil and carefully place the steak on the hottest part of the grill. Cook until the internal temperature is 135 to 140 degrees F, about 8 minutes per side. Remove the steak and let it rest on a cutting board for about 10 minutes.
  • Meanwhile, mix the sour cream, mayonnaise, horseradish, Worcestershire and 1 tablespoon parsley in a small bowl. Slice the steak 1/2-inch thick. Spread half of the horseradish sauce on a platter, then arrange the steak on top of the sauce (keep the bone on the platter to show it is a porterhouse). Drizzle a little more sauce on and sprinkle with the remaining parsley.

Provided by Robert Irvine : Food Network

Time 1h

Yield 3 to 9 servings

Number Of Ingredients 8

1/4 cup grapeseed oil
1/4 cup dark balsamic vinegar
1 teaspoon garlic puree
1 teaspoon minced rosemary
1 teaspoon salt and pepper blend (60 percent to 40 percent mixture)
Juice of 1 lemon
1, 2 or 3 pounds hanger steak
Potatoes, for serving

Steps:

  • In a bowl, start the marinade for the hangar steak by blending the oil, vinegar, garlic, rosemary, salt and pepper blend and lemon juice and whisk together well. Place the steak in an 8 by 12-inch casserole pan and generously coat with the marinade. Allow to marinate for 30 minutes to 1 hour under refrigeration.
  • For cooking, preheat a grill or chargrill over high heat. Remove the steak from the marinade, straining any excess marinade. Removal of the excess marinade will prevent flaming or charring of the steak during cooking. Place the steak on the grill and cook over high heat, 8 to 9 minutes per side, or to desired doneness.
  • Remove from the grill and allow the steak to rest before slicing. Slice the steak on the bias, top to bottom, against the grain, 1/4 inches thick. Place the sliced steak over potatoes and serve.

Tips:

  • To ensure the hanger steak is cooked to your desired doneness, use a meat thermometer to check the internal temperature. For medium-rare, cook to 135°F (57°C). For medium, cook to 145°F (63°C). And for medium-well, cook to 155°F (68°C).
  • Let the hanger steak rest for at least 10 minutes before slicing and serving. This allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful steak.
  • If you don't have a grill, you can also cook the hanger steak in a grill pan over medium-high heat. Just be sure to preheat the grill pan before adding the steak.
  • The horseradish-chive sauce is a great complement to the hanger steak. Be sure to make plenty of it, as it's also delicious on other grilled meats, such as chicken or fish.
