For the Burger:
3 lbs. fresh ground beef
1 cup fresh breadcrumbs
1/2 cup milk
1/2 cup fresh cilantro - chopped
3/4 tsp. salt
1/2 tsp. black pepper
1/2 tsp. dried oregano
2 tablespoons Worcestershire sauce
For the Tomato Onion Relish:
1/2 cup of fresh cilantro - chopped
Juice of 1/2 lemon
3 vine ripe tomatoes - blanched
1 sweet onion - sliced
2 cloves of garlic - chopped
2 tablespoons soy sauce
2 tablespoons of Worcestershire sauce
1/4 tsp. red pepper flakes
1/2 tsp. salt
1/4 tsp. black pepper
2 tablespoons of olive oil

Steps:

  • For the Burger: In a large bowl combine all of the above ingredients; mix well and form into desired sized hamburgers. Heat a large 10 inch frying and place the formed burgers. Do not overcrowd the pan. Depending on how thick you make the burgers will determine how long they should be cooked; also it depends on how you like to eat your burgers. For the Tomato Onion Relish: Bring a small sauce pot of water to a simmer and add the tomatoes. Let the tomatoes simmer for about 2-3 minutes. Remove the tomatoes and set aside to cool. Heat a medium sized frying pan with one tablespoon of olive oil and add the onion slices. Sauté the onions until they are transparent. Add the garlic and cilantro. Continue to sauté for another minute or two until the garlic is fragrant. Gently, remove the skin from the tomatoes and chop the meat from the tomatoes. Add the tomatoes to the onions and garlic; continue to sauté on a low heat. Add the seasonings, soy sauce, and Worcestershire sauce and lemon juice and sauté on low for another few minutes. Remove from the heat; place in a bowl and drizzle with a tablespoon of olive oil. Serve with the burgers.

2 pounds freshly ground beef (preferably 80/20)
1/2 cup champagne vinegar
3 tablespoons mustard seed
1 tablespoon honey
1 teaspoon salt
1 tablespoon vegetable oil
3 medium onions, julienned
1/4 cup veal stock or store-bought low-sodium beef or chicken stock
8 very thin slices pancetta
Salt and freshly ground pepper
Salt and freshly ground pepper
4 brioche rolls
4 ounces Taleggio cheese, sliced
1 beefsteak tomato, sliced
1 head Bibb lettuce, leaves separated

Steps:

  • Preheat the oven to 350 degrees F. Preheat the grill to high heat.
  • Start by forming the meat into 4 patties about 3/4-inch thick. Refrigerate until ready to grill.
  • For the relish: Combine 2 cups water, the vinegar, seeds, honey and salt in a medium saucepan. Bring to a simmer and cook over medium-high heat until the liquid has reduced to a creamy consistency, about 12 minutes. Heat the oil in a medium skillet over medium heat. Add the onions and cook, stirring occasionally until caramelized and golden brown, about 20 minutes. Add the veal stock and cook until the skillet is dry, about 3 minutes. Stir the onions into the mustard seed mixture and reserve until needed.
  • Meanwhile, lay the pancetta on a baking sheet and bake until golden brown and crispy, 12 to 15 minutes.
  • Sprinkle the burgers liberally with salt and pepper and grill until medium rare, 4 minutes per side. Toast the buns on the grill and place 1 ounce of the cheese on top of each burger. Close the lid until the cheese melts and becomes gooey, about 30 seconds.

1 red chilli , deseeded and finely chopped
2 tbsp chopped coriander , plus small handful leaves, to serve
300g pack cherry tomatoes on the vine
4 tbsp olive oil
juice 1 lime
2 tbsp sweet chilli
small handful flat-leaf parsley leaves
1 small red onion , cut into wafer-thin slices
2 English muffins , toasted

Steps:

  • Heat oven to 200C/fan 180C/ gas 6. Mix the beef with the chilli and some chopped coriander, then season well. Shape into four patties about 2.5cm thick. Chill until needed.
  • Keeping the tomatoes on the vine, put them in a roasting tin. Drizzle over 1 tbsp of olive oil and season. Roast for 12-15 mins until just soft.
  • Heat 1 tbsp of oil in a non-stick frying pan. Then cook burgers on each side for 4 mins for rare or 5 mins for medium. For the relish, mix 2 tbsp of olive oil, the lime juice and sweet chilli sauce, parsley, coriander leaves and red onion. To serve, place a burger on a muffin half, add a branch of tomatoes and top with red onion relish.

1/2 pound ground pork
1/2 pound ground veal
Salt and freshly ground pepper
1 tablespoon extra-virgin olive oil
Rolls (recommended: Parker House)
16 dill pickles
Onion Relish, recipe follows
2 tablespoons extra-virgin olive oil
3 cloves garlic
2 onions, cut in 1/2 lengthwise and sliced thinly
Salt and freshly ground pepper
1/2 cup water
1/2 cup ketchup
2 tablespoons yellow mustard

  • Heat a grill to high.
