This is something new that our family tried that I got from a magazine. We were surprised that we would all like it so much! It doesn't take very much time at all so it is great when time is limited.

1 lb ground beef
1 (3 ounce) package ramen noodles (I prefer beef flavor)
2 cups water
2 cups vegetables (frozen mixed veggies, thawed; peas and corn work perfect!)

Steps:

  • In a skillet, cook beef until no longer pink; drain.
  • Add noodles with contents of seasoning packet and water.
  • Bring to a boil; cook for 3 minutes or until noodles are tender.
  • Add the veggies and cook until tender, about 3 minutes as well.
  • Makes about 4 servings.
  • Here is another way to do it: Cook the beef as stated previously. During this time, heat up a saucepan of water to cook the ramen noodles in. Rather than just using 1 packet, use 2 packets of the beef flavor ramen noodles. When cooking the noodles, cook them without the flavoring. During this time, (after you drain the ground beef) add the veggies to the meat and continue to cook. As the veggies become cooked, add the two packets of flavoring to the beef-veggie mixture. The ramen noodles don't take long to cook, so be sure to watch them. When they are done, drain them, and add them to the beef-veggie mixture. The completed dish will have more flavor, and more noodles for the noodle lovers! Enjoy!

3 slices bacon
1 lb hamburger meat
3 tablespoons onions, chopped
1/4 cup soy sauce
1/4 teaspoon pepper
1/2 cup water
2 potatoes, sliced
1 large green pepper, sliced
2 tomatoes, sliced
3 stalks celery, sliced
2 cups cabbage, chopped

Steps:

  • Cut up 3 strips of bacon and fry until crisp.
  • Add 1 lb hamburger meat and 3 tbsp chopped onions and brown.
  • Add 1/4 cup soy sauce, 1/4 tsp pepper and 1/2 cup water.
  • Add the last 5 vegetables in layers.
  • Cover and cook over high heat for 1 minute.
  • Reduce heat and cook slowly for 15 minutes more.

3 cloves garlic, finely chopped
1 carrot, cut into 1/4-inch dice
1 small onion, chopped
1 tablespoon tomato paste
One 15-ounce can low-sodium beef broth
1 tablespoon Worcestershire sauce
2 cups dried penne pasta
2 ounces cream cheese, at room temperature
1/4 cup sour cream
3 tablespoons chopped fresh chives
3 tablespoons chopped fresh parsley leaves

Steps:

  • Heat a large nonstick skillet over medium-high heat. Add the beef, season with salt and pepper and cook, breaking the beef into small pieces with a wooden spoon, until well browned, about 5 minutes. Transfer to a medium bowl, leaving behind any drippings, and reduce the heat to medium.
  • To the same skillet, add the mushrooms, season with salt and cook until golden brown, 8 to 10 minutes. Transfer the cooked mushrooms to the bowl with the beef. Add the oil, paprika, garlic, carrot and onion to the skillet and cook until the carrots are soft and the onion is lightly browned, about 10 minutes.
  • Stir in the tomato paste and cook until the tomato paste has toasted and is evenly coating the vegetables, 2 to 3 minutes. Add the broth, Worcestershire and 1 1/2 cups of water to the skillet. Bring to a simmer and stir in the pasta. Cover and cook according to package directions until just al dente. Uncover, stir in the reserved beef and mushrooms and cook until heated through. Remove from the heat and stir in the cream cheese, sour cream, chives and parsley until the cream cheese melts and the sauce is creamy. Season with salt and pepper. Serve warm.

I don't know the origin of this recipe, but I've been making it for years, and it was always a family favorite. You can use as much, or as little, cheese as you like and any combination of cheese that suits you. I usually put parmesan down as my first layer, top that with shredded cheddar and then top that with some shredded mozzerella. (I like cheese). I have always used 1 1/2 cups of the dried elbows, 'cause I like my dish a little thicker. Enjoy.

2 tablespoons vegetable oil
1 1/2 lbs ground beef
2 medium onions, chopped
1/2 medium green pepper, chopped (optional)
1 (28 ounce) can tomatoes, undrained
1 (12 ounce) can corn, undrained
1 cup elbow macaroni, uncooked
1 tablespoon chili powder
2 teaspoons garlic salt
4 -6 ounces shredded cheese, or
4 -6 ounces shredded cheese, combination

Steps:

  • Saute ground beef in 12" skillet, until browned, drain most of grease.
  • Add onions and (peppers, if using ) cook 2 minutes.

  • cheese is melted.
  • Note: May use garlic powder instead of garlic salt, and then just add salt to taste. If dish seems a little dry as it cooks, may add additional water.

1 medium onion, sliced and separated into rings
1 medium green pepper, coarsely chopped (I use frozen green pepper)

1 (8 ounce) can tomato sauce
1 teaspoon Worcestershire sauce
1/2 teaspoon dried basil
1 1/2 cups water
