1 lb lean ground beef
1 tablespoon Worcestershire sauce
1/4 teaspoon onion powder
1/8-1/4 teaspoon salt
1/8-1/4 teaspoon black pepper
1 (1 ounce) package brown gravy mix (packet size varies)
1 (10 1/2 ounce) can condensed cream of mushroom soup
1 (5 ounce) can evaporated milk

Steps:

  • Mix 2 tsp of the brown gravy with the rest of the patty ingredients then form into 2 inch circles. Brown the patties in a skillet on medium until cooked through.
  • Mix the ingredients together for the gravy, stirring well. Pour over the cooked patties then cover with a lid & simmer on low for 7 minutes.
  • Serve hot over mashed potatoes.

2 eggs
2 tablespoons minced onion
1 tablespoon beef base
½ teaspoon black pepper
3 slices white bread
2 pounds lean ground beef
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can water
1 dash Worcestershire sauce

Steps:

  • Whisk together the eggs, onion, beef base, and pepper in a bowl. Tear the bread into large pieces, and place into the bowl. Let the bread soak for a few seconds and add the ground beef. Mix the meat into the egg-bread mixture, and form into 8 patties.
  • Heat a large heavy skillet over medium-high heat, and fry the patties until they are browned and the meat is no longer pink in the center, about 8 minutes per side. Set the patties aside.
  • Remove the excess grease from the skillet, and whisk the mushroom soup, water, and Worcestershire sauce together in the skillet until smooth. Place the patties back into the skillet, spoon sauce over them to cover, and bring to a boil over medium-high heat. Reduce the heat to a simmer, and cook until the sauce is thickened and the flavors have blended, about 20 minutes.

This is my recipe for flavorful beef patties smothered in a rich, homemade beef gravy; no packaged gravy involved. It's carnivore comfort food!

DREDGE MIXTURE:
1 c all-purpose flour (*reserve extra for gravy)
1 tsp salt
1/4 tsp ground black pepper
MEAT MIXTURE:
1/2 tsp Montreal steak seasoning
1/2 tsp salt, plain (*see note)
1/2 tsp seasoned salt (such as Lawry's)
1/2 tsp wild porcini sea salt (*see note)
1/4 tsp garlic powder
1/8 tsp ground black pepper
2 Tbsp mayonnaise
1/2 c onions, small chopped
2 lb ground beef
FOR FRYING:
2 Tbsp vegetable oil
GRAVY:
1 1/2 Tbsp reserved oil from frying
2 1/2 to 3 Tbsp *reserved flour dredge mixture
1 can(s) beef broth (14.5 oz.)
2 tsp soy sauce
1 pinch freshly ground black pepper

Steps:

  • 1. (*NOTE: If wild porcini sea salt is not available, increase plain salt by equal amount.)
  • 2. In large bowl, combine Montreal steak seasoning, seasoned salt, wild porcini salt, plain salt, garlic powder and ground black pepper; add 2 tablespoons mayonnaise; mix well; add chopped onions; mix.
  • 3. (Food service plastic gloves are advised.) Add ground beef; mix thoroughly by hand; form mixture into 8 fairly equal-sized hamburger patties and place on a large plate or platter; set aside, or cover and refrigerate, until ready to dredge in flour.
  • 4. To prepare dredge mixture, in a shallow dish, mix together 1 cup flour, 1 teaspoon salt and 1/4 teaspoon pepper.
  • 5. Working with one patty at a time, place patty in flour mixture; turn to coat all sides; place patty back on plate; repeat until all patties are coated. Reserve remaining flour for gravy.
  • 6. Preheat oven to 350ºF.
  • 7. To a large skillet, add 2 tablespoons vegetable oil; place over medium-high heat.
  • 8. When oil is hot, add patties to skillet.
  • 9. Pan-fry patties until browned on both sides (patties do not need to be fully cooked as they will continue cooking in oven,) about 3 to 4 minutes per side.
  • 10. Remove browned patties and place in single layer in a 9"x13" or smaller baking dish.
  • 11. Remove skillet from heat; pour grease out of skillet, retaining about 1 1/2 tablespoons of the grease with the brown bits.
  • 12. Add 2 1/2 tablespoons of the reserved flour to the grease; using a large, heat-proof spoon or spatula, blend together as much as possible (some of the flour will not be blended and that's okay).
  • 13. Return to heat; slowly stir in 1 can of beef broth, smoothing any clumps of flour; bring to simmer, stirring constantly to avoid lumps as gravy thickens.
  • 14. Remove from heat; add 2 teaspoons soy sauce and pinch of freshly ground black pepper; stir well; pour gravy over patties in dish.
  • 15. Cover dish with aluminum foil.
  • 16. Bake at 350ºF for 30 minutes. Serve hot. (Serve with mashed potatoes, noodles or rice or over toasted bread.)
  • 17. Cover and refrigerate leftovers.

1/2 teaspoon ground mustard
1/2 teaspoon smoked paprika
1 large egg
1 clove garlic, minced
Kosher salt and freshly ground black pepper
1 pound ground beef (80/20)
2 tablespoons breadcrumbs
1 tablespoon vegetable oil
10 ounces baby bella mushrooms, sliced
2 sprigs thyme, leaves picked and stems discarded
3 tablespoons unsalted butter
1 small onion, thinly sliced
1 clove garlic, sliced
3 tablespoons all-purpose flour
2 cups low-sodium beef broth, hot
2 teaspoons Worcestershire sauce
2 tablespoons fresh parsley, roughly chopped

Steps:

  • For the hamburger steaks: Whisk together the mustard, smoked paprika, egg, garlic, 1 teaspoon salt and 1/4 teaspoon pepper in a medium mixing bowl. Mix in the ground beef and breadcrumbs by hand, then form into 4 oval patties, about 1/2 inch thick.
  • Set a large nonstick pan over medium-high heat and add the oil. Add the patties and brown on both sides, about 3 minutes per side. Transfer the patties to a plate; set aside.
  • For the onion and mushroom gravy: Turn the heat down to medium and add the mushrooms and thyme. Cook until the mushrooms release their liquid and are browned, about 8 minutes. (The mushrooms might seem dry at first, but will eventually release liquid and add moisture to the pan.) Transfer the mushrooms to a plate; set aside.
  • Melt the butter in the pan, add the onions and garlic and cook until translucent and lightly golden, about 10 minutes. Sprinkle in the flour and cook, stirring, until the butter and liquid are absorbed, about 1 minute. Pour the broth and Worcestershire into the pan and stir until the flour is dissolved.
  • Turn the heat to high and bring to a boil. Stir the mushrooms back into the pan and nestle in the beef patties. Cover with a lid and reduce the heat to medium low. Let simmer until the sauce has thickened and a thermometer inserted into the patties registers 165 degrees F, about 10 minutes.
  • Turn the patties over a few times to coat in the sauce. Season with salt and pepper and top with the parsley.

2 lbs ground beef
1 large egg
1 medium onion
3/4 cup Italian seasoned breadcrumbs
3 tablespoons dried parsley
salt and pepper
3 dashes A.1. Original Sauce
1/2-3/4 cup flour
cold water
salt and pepper
2 (10 ounce) cans beef broth

Steps:

  • Dice onion.
  • Combine all ingredients in lg bowl.
  • Preheat oven to 325 degrees.
  • Preheat a nice heavy fry pan on med heat. I prefer a good cast iron pan as I think it adds to the flavor. Add a few table spoons of canola oil to coat the pan.
  • Form ground beef mix into tennis ball size patties, slightly flattening before placing into hot fry pan. Patties will sear nicely in the hot pan, turn over after 4 minutes or so. I like to really brown them on both sides. Don't worry if they sick a little -- it adds to the gravy. After browning to desired color, remove from pan and place in appropiate sized roaster. finish browning all beef mixture, adding slight amounts of oil as needed.
  • After all are browned, add 2 cans of beef broth to drippings in fry pan. Heat to boiling.
  • In the mean time place 1/2 cup of flour, Wondra gravy flour works best, in a x-large coffee mug, add cold water while mixing with a fork. Mixture should be thick like a milk shake. Add salt and pepper -- don't be afraid to use the pepper.
  • Slowly add to boiling beef broth and dripping mixture in fry pan, wisking constantly, scraping up the bits stuck to the pan, re heat to boiling and reduce to simmering. allow to cook for 5 minutes to eliminate raw flour taste.
  • Pour through a strainer over hamburgs in roasting pan and place in oven. Reduce heat to 275 and allow to bake for 1 1/2 to 2 hours.
  • My family loves it served with mashed potatoes, canned corn and biscuts.

1 (8 ounce) can cream of mushroom soup
1 cup water (1/2 to 1 cup) or 1 cup milk (1/2 to 1 cup)
1 (1 ounce) package brown gravy mix (packet size varies)

Steps:

  • Dice onion and add to the ground beef. (If using onion soup mix, blend well in ground beef.).
  • Mix and form into patties.
  • Fry the patties in skillet on medium heat until cooked to your liking.
  • I usually fry until they are medium-well to well done.
  • While patties are cooking, mix 1 can cream of mushroom soup, 1/2 to 1 cup water or milk, and brown gravy packet/mix in a bowl, stirring well.
  • After patties are browned and ready, add the soup mixture to the skillet. Reduce heat to simmer; spread the mixture over the patties and turn them once or twice as the mixture warms.
  • Stir mixture occasionally.
  • Simmer for 5 to 10 minutes or until gravy is good and hot.
  • Serve with mashed potatoes, your choice of veggies, a good salad, hot rolls or bread, and a cold glass of iced tea.
  • Of course, this recipe can be doubled. Serving size depends on how hungry your family or company is! ;).
  • Kind of a "blue-plate" special!
