Although updated for just four servings this was a favorite for Sunday dinner where mom would turn 2 pounds of ground beef into something that would feed her family of nine and make us feel like we had dined at the nicest restaurant in town. There is no way it could have tasted any better to her family.

- 1. Place the flour in a shallow dish
- 2. whisk the egg and milk together in another shallow dish.
- 3. Place the cracker crumbs in a shallow dish
- 4. Make four patties out of the ground beef
- 5. Place enough oil in either a nine or ten in skillet to be about an 1/8 to 1/4 inch deep and begin heating the oil on medium heat.
- 6. Dredge the patties in first the flour be sure to coat both sides really well, then dip into the egg milk mixture coating both sides. ( this is the secret to getting your cracker or bread crumb coating to stick on any meats when you use the flour first then your egg mix it forms a type of glue that your cracker or bread crumb coatings stick to easier.) Last coat both sides well with the cracker crumbs. Salt and pepper to taste.
- 7. When oil is hot place your patties in the pan and fry on each side 7 or 8 minutes until nicely golden brown and juices run clear.
- 8. Mom always made homemade cream gravy, mashed potatoes and corn on the cob when in season along with her hot from the oven biscuts with butter and honey from our own hive. Oh my was this a wonderful meal.

- In a large mixing bowl, mix together ground round, beaten eggs, onions, soda crackers, garlic powder, salt, pepper and barbecue sauce. Mix until well incorporated.
- Weigh out hamburger patties to 6 - 7 ounce each.
- Press together and flatten to about 3 1/2" in diameter or use a mold.
- The patties should be about 3/4" thick.
- Using a round wooden spoon handle (about 1/4" round), make a hole in the center of the hamburger pattie.
- In a frying pan over medium-high heat, heat olive oil.
- Place 3 patties into the hot oil and fry for about 2 to 3 minutes, the hole will begin to close.
- Turn patty over and continue to fry for about 2 to 3 minutes.
- The hole that was made in the pattie will fill in when the hamburger is cooked through properly.
- Check for doneness to make sure there is no pink showing.
- NOTE: If the burger mixture does not hold together when squeezed, add some milk and mix to blend.
- Serve in a nice large bun that is warmed and buttered with a spread of mayonnaise, Dijon mustard, a slice of sweet onion, a slice of a large tomato, and a leaf of lettuce.
- A slice of Swiss cheese layered on the burger patty is great.
- A pickle of your choice adds an additional touch.
- Fry some mushrooms and spread some over the top of the bun.
- Fried caramalized onions are a good added touch.
- This makes a fantastic hamburger.

- So I might be the last one on the planet to do it this way --
- In the past, I've seasoned hamburger patties on the grill -- while they were grilling. And while it works, it wasn't going to work for me last weekend when we were having a bunch of family over for dinner. I wanted to prep as much as I could ahead of time so that I could enjoy them while they were at our house, instead of running around my kitchen like a chicken without a head (sorry, bad visual!) -- so this is what happened.
- As I was getting everything out, I though, "Why not season the bottom of the cookie sheet first so that both sides of the patties can be grilled before they hit the grill?".
- So that's what I did. Sprinkle seasoning on the cookie sheet. Make patties and then put them on top of the seasoning and move around a little to "catch it all" and waste as little as possible. Sprinkle more on top and voila.
- Ready for the grill. (Or refrigerator, in my case -- as I was making them up early in the afternoon long before everyone arrived. This is what happens when there is a baby in the house -- you get stuff done while they are sleeping, even if that means making dinner at 2pm!).
- And while I didn't get all scientific about it, it seemed to me that the seasoning stuck to the burger better and less fell through into the grill!

DEVILED BEEF HAMBURGER PATTIES
My all-time favorite hamburger patty for making American style burgers. I found the original recipe in the Better Homes and Gardens Barbecue Book back in the 70's and this is the only recipe I ever use. It has been modified somewhat, but it retains most of the original ingredients. I always have a bottle of chili sauce in the refrigerator at all times for making these. Although you can perhaps substitute ketchup for chili sauce the taste will not be the same. You need to mix this meat mixture thoroughly. I use circular motion to get fat from ground beef and egg emulsified. The original recipe is for 4 hamburger patties but I usually make 5 patties because I like my patties smaller than quarter pounder.
