1/2 cup chopped onion
1 garlic clove, minced
6 cups water
1 can (16 ounces) kidney beans, rinsed and drained
1 can (28 ounces) diced tomatoes, undrained
1-1/2 cups frozen whole kernel corn
1-1/2 cups sliced zucchini
1 cup shredded cabbage
1 celery rib, chopped
2 teaspoons beef bouillon granules
2 teaspoons Italian seasoning
1/4 teaspoon salt
1/2 cup uncooked elbow macaroni

1 (28 ounce) can diced tomatoes
1 cup shredded cabbage
1 large onion, diced
2 small potatoes, scrubbed (or peeled)
2 carrots, peeled and cubed
2 stalks celery, sliced
1 small bay leaf
1 teaspoon salt
1/4 teaspoon dried thyme leaves
1/4 teaspoon dried basil leaves
1/4 teaspoon freshly ground black pepper
grated mozzarella cheese or parmesan cheese

Steps:

1 lb ground chuck
1 cup chopped onion
1 cup raw chopped potato
1 cup chopped celery
1 cup raw sliced carrot
1 cup shredded cabbage
28 ounces whole tomatoes
2 cups water
3 bay leaves
1/2 teaspoon thyme
1/2 teaspoon basil
1/4 cup macaroni
1 quart water
salt & pepper, to taste

Steps:

  • Brown ground chuck with chopped onions. Drain well.
  • Place all ingredients in stock or crock pot (including raw macaroni) and cook over low heat for 1-1/2 to 2 hours; stirring often.
  • Can place in crock pot over low heat 5-6 hours or until vegetables are tender.
  • *If you prefer your pasta al dente, then cook pasta separately and add to soup just before serving or add towards the end and cook until it is done to your preference. You can also use rice instead of macaroni.

1 medium onion, chopped
1 quart reduced-sodium fat-free beef broth

2 stalks celery, diced
1 (15 ounce) can kidney beans, rinsed and drained (or canneloni or great northern beans, no sugar added)
