These mini pot roast pockets are easy and delicious. And my favorite part...they require very little cleanup! Can be done in the oven, on the grill, or over the campfire on camping trips.

1 lb ground beef
4-5 med carrots
2-3 med potatoes
4 tbsp butter
2 packets of onion soup mix
1 onion, Optional. I don't use onions as I'm not a big fan but they would make a nice addition.
4 pieces of aluminum foil, 1.5 feet each

Steps:

  • Preheat oven to 350
  • Divide ground beef into 4 even hamburger patties about 1 inch thick. If you are feeding children you may want to make their portions smaller.
  • Wash your veggies. Cut carrots into 1 inch pieces and potatoes into 1-2 inch pieces.
  • Place hamburger patties in the center of each piece of aluminum foil. Surround each patty with pieces of carrots, potatoes, and onions if you choose.
  • Place 1/2-1 tbsp butter on the center of each patty. Sprinkles approx 1-2 tbsp of onion soup mix over the ingredients.
  • Gather the corners of the foil up and scrunch together to seal each pocket. Place sealed pockets onto a baking sheet in case any sauce leaks out during baking.
  • Bake at 350 for 40-60 minutes. Carefully unwrap one pocket keeping face away as steam escaping will be hot. Poke carrots and potatoes with a fork to check for doneness. Once vegetables are done the meat should be cooked through as well. You can check with a meat thermometer. Meat should read 140 degrees or more.

1 lb ground chuck
1 large sweet onion, sliced
4 yukon gold potatoes, thinly sliced
4 medium carrots, peeled and thinly sliced
4 dash(es) garlic salt
4 dash(es) onion powder
4 dash(es) seasoned salt
4 dash(es) black pepper
butter flavor cooking spray or i can't believe it's not butter spray
4 12 inch sheets of heavy duty aluminum foil

Steps:

  • 1. Lay out 4 sheets of heavy duty aluminum foil and spray each one with butter flavor cooking spray. Place onion slices on the center of foil.
  • 2. Shape the ground beef into four quarter pound hamburger patties. Lay hamburgers on top of onions and sprinkle with seasonings.
  • 3. Place sliced carrots and potatoes over hamburger patties and sprinkle again with seasonings and spray with a bit of butter flavored cooking spray or I can't believe it's not butter spray.
  • 4. Fold aluminum foil over burgers and vegetables and seal edges to make a pouch.
  • 5. Bake in preheated 350 degree oven or grill over hot coals for 30 minutes until meat is cooked through and potatoes and carrots are tender.

Reynolds Wrap Foil
1 1/2 lbs ground beef
6 slices bacon
12 small potatoes
2 medium red onions
2 cups baby carrots
1 cup red bell pepper
1 cup green bell pepper
2 cups zucchini
3 minced garlic cloves
2 tablespoons olive oil
1 teaspoon black pepper
2 teaspoons salt
1 tablespoon yellow mustard

Steps:

  • Tear off and set aside 6 12-inch square pieces of Reynold's Wrap foil to serve as your hobo dinner pouches. Also line a large baking dish or tray with a sheet of foil for easy clean up of any drips.
  • Chop vegetables into bite-size pieces and lightly cover with olive oil, salt, and pepper.
  • Mince garlic. Cover with salt and smash with blade of knife until forms a garlic-salt paste.
  • Mix into ground beef: garlic salt paste, pepper, olive oil, and yellow mustard. Stir until mixed well.
  • Form meat into 6 portions 1/4 lb. each and smash into thick burger patties on the foil sheets. Wrap a piece of bacon around each one.
  • Place vegetables with bacon burgers and fold the foil corners up to enclose the food in foil pouches.
  • Place foil pouches on foil lined baking pan and bake in oven @ 400 degrees for 30 minutes. You'll next drain out excess liquid from the vegetables then return to cook uncovered for another 15 minutes. This will allow vegetables to brown and onions to caramelize.
  • Drain water from vegetables by opening one side of each foil pouch, form it into the shape of a spout, and pour out the excess liquid by tilting them over a sink. The foil works great for this step because the tips of the foil at the top of the pouches cool off in seconds and you can hold onto them to drain out the liquid.
  • Open the pouches so food is uncovered and return to oven to continue cooking for 15 minutes. If you would like vegetables more browned and bacon crisper, also broil them on high 6 inches from heat for 2-3 minutes.
