Time 4h30m

Yield 12

Number Of Ingredients 7

1 fully cooked bone-in ham shank (12 lb)
1 tablespoon black peppercorns, coarsely crushed
30 whole cloves
1 can (12 oz) cola carbonated beverage
1/4 cup bourbon
6 tablespoons packed brown sugar
1 jar (13 oz) cherry preserves

Steps:

  • Heat oven to 350°F. Lightly spray 13x9-inch pan with cooking spray. Remove skin from ham; trim fat to 1/4-inch thickness. Make shallow cuts in fat 1 inch apart in diamond pattern. Rub peppercorns over surface of ham; insert cloves in centers of diamonds.
  • Place ham in pan. Insert ovenproof meat thermometer so tip is in thickest part of ham and does not touch fat or bone. In small bowl, mix 1 1/4 cups of the cola, 2 tablespoons of the bourbon and 1/4 cup of the brown sugar; pour over ham. Bake uncovered 2 hours, basting with pan drippings every 15 minutes.
  • In 1-quart saucepan, mix remaining 1/4 cup cola and remaining 2 tablespoons each bourbon and brown sugar. Add 2/3 cup of the preserves. Cook over medium heat 3 minutes or until glaze is hot and sugar is dissolved. Brush glaze over ham. Bake 1 hour 45 minutes longer or until thermometer reads 140°F. Transfer ham to serving platter; cover with foil. Let stand 30 minutes before carving.
  • Skim fat from drippings in pan. Stir remaining 1/2 cup preserves into drippings with whisk. Transfer mixture to a saucepan. Heat to boiling; reduce heat. Simmer 8 to 10 minutes or until thickened. Serve glaze with ham.

Time 1h40m

Yield 8 servings, 1 cup glaze

Number Of Ingredients 11

Nonstick spray
1(5-pound) boneless ready-to-eat ham
1/2 cup water or white wine
1 cup cherry preserves
1 tablespoon prepared horseradish (creamy)
1 tablespoon packed light brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin
1/4 teaspoon ground cardamom
1/4 teaspoon salt
1 lemon, zested and juiced

Steps:

  • Preheat the oven to 350 degrees F. Line a roasting pan with foil and spray it with nonstick spray.
  • Score the top and sides of the ham with a small sharp knife in a crisscross pattern. Put the ham in the pan, pour 1/2 cup water or white wine into the bottom of the pan and bake, covered loosely with a tent of foil, 45 to 60 minutes.
  • To make the glaze, combine the preserves, horseradish, brown sugar, cinnamon, cumin, cardamom, salt, and lemon juice in a medium bowl. Transfer the cherry mixture to a small saucepan and bring to a boil over medium heat. Boil until the glaze is slightly thickened, 2 to 3 minutes. Remove from the heat; stir in the lemon zest.
  • Remove the ham from the oven and brush the top with 1/4 cup of the glaze. Bake, uncovered, until the ham is hot and an instant-read thermometer inserted into the center registers 140 degrees F, about 20 minutes longer. Remove the ham from the oven to a cutting board and let stand 10 minutes before slicing. Arrange the sliced ham on a serving platter and serve with the reserved glaze.

Tips:

  • Choose a high-quality ham for the best flavor. A spiral-cut ham is easiest to glaze and cook evenly.
  • If you don't have bourbon, you can substitute another type of dark liquor, such as rum or whiskey.
  • The glaze can be made ahead of time and stored in the refrigerator for up to 5 days.
  • To keep the ham moist during cooking, baste it with the glaze every 20 minutes or so.
  • Use a meat thermometer to ensure that the ham is cooked to your desired doneness. The internal temperature should reach 140 degrees Fahrenheit for a medium-rare ham or 160 degrees Fahrenheit for a fully cooked ham.
  • Let the ham rest for 10-15 minutes before carving to allow the juices to redistribute.

Conclusion:

This ham with bourbon cherry glaze is a delicious and easy-to-make dish that is perfect for any special occasion. The sweet and tangy glaze complements the salty ham perfectly, and the bourbon adds a touch of sophistication. Whether you are serving it for a holiday dinner or a casual get-together, this recipe is sure to be a hit.
