Picked this up some years back at the state fair from the California Sweet Potato Council. This dish is very rich and filling and was the only way DS would eat sweet potatoes when he was young.

1 1/2 lbs fresh sweet potatoes (yam variety)
1/4 cup butter or 1/4 cup margarine
1/2 cup onion, chopped
1/4 cup flour
1/2 teaspoon salt
1/2 teaspoon basil, crushed
1/4 teaspoon dry mustard
1/8 teaspoon pepper
1 1/2 cups milk
1 1/2 cups swiss cheese, grated
3/4 lb ham, cooked, cubed

Steps:

  • Wash sweet potatoes. Cook unpeeled sweet potatoes, covered, in small amount of boiling salt water untill tender, about 20 to 30 minutes. Cool. Peel and slice 1/4 inch thick; set aside.
  • Melt butter in medium saucepan. Add onion, cook until tender. Remove from heat; stir in flour, salt, basil, mustard and pepper. Cook over low heat until bubbly, 2 to 3 minutes. Remove from heat; stir in milk all at once. Cook over medium heat, stirring constantly, until mixture comes to a boil. Boil and stir one minute. Remove from heat. Stir in 3/4 cup of cheese and the ham.
  • Pour half of mixture into greased 2 quart casserole. Arrange half of sweet potaotoes on top. Repeat layers. Bake at 350*F, 25 minutes. Sprinkle with remaining cheese and bake 3 to 4 minutes longer, or until cheese has melted.

1 lb honey-roasted ham, cut in small cubes
1 -2 tablespoon olive oil
2 tablespoons butter
2 tablespoons flour
1 1/2 cups milk (for non-dairy use 1 1/2 c. rice dream rice milk)

pepper
chives
dried basil
4 medium potatoes, peeled and sliced paper thin
1/2 cup chopped onion

Steps:

  • Pan fry ham and chopped onion in olive oil until onions are lightly browned.
  • While onions and ham are cooking, peel potatoes and slice paper thin.
  • Butter a medium casserole dish and place sauteed ham and onion inside.
  • Salt and pepper the ham and onions.
  • preheat oven at 325 degrees.
  • Melt butter in a sauce pan, remove from heat and blend in flour. Return to heat and add milk or rice dream rice milk. Stir over direct heat until sauce boils and thickens.

1 (26 ounce) bag frozen hash brown potatoes
1 lb ham slices, cut into bite-size pieces
1 (10 3/4 ounce) can cream of potato soup, undiluted
1 small onion, diced
1/4 cup melted butter
1/2 teaspoon pepper
1 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350°F.
  • In a small skillet saute onions in butter until tender. Remove from heat and allow to cool slightly.
  • Combine potatoes, cheese, ham slices, soup, onions with butter and pepper in a large bowl.
  • Spoon this mixture into a 13 x 9 inch baking dish sprayed with non-stick.
  • Bake at 350° F for about 35 minutes or until lightly browned.

This is my Mom's recipe. Haven't had it in years but it was a rainy night and I had leftover ham. Forgot how wonderful things taste from your childhood! Very easy main dish meal.

4 -5 medium red potatoes or 4 -5 medium yellow potatoes, peeled and thinly sliced
1/2 green bell pepper, diced
1/2 medium onion, diced
1 1/2 cups diced cooked ham
1 (10 3/4 ounce) can cream of mushroom soup
1/2 cup whole milk
1 tablespoon butter
3/4 cup canned plain breadcrumbs

Steps:

  • Preheat oven to 350 degrees.
  • Spray 1 1/2 quart casserole dish with non-stick spray or lightly butter.
  • Arrange half of potatoes, green pepper and onion, and ham in dish.
  • Sprinkle with freshly ground black pepper.
  • Repeat with remaining half potatoes, peppers, onions and ham.
  • Mix soup and milk in seperate container until fairly smooth.
  • Pour over casserole.
  • Gently move ingredients around so mixture can seep inches.
  • Cover and cook for one hour.
  • Heat the 1 tablespoons butter in saucepan or microwave until just melted.
  • Add bread crumbs and toss to coat.
  • Remove lid from casserole and sprinkle with crumbs.
  • Continue to cook uncovered for 15 minutes.
  • Remove from oven and allow to stand for 10 minutes.

1 cup sour cream

6-8 slice ham 1/8-inch thick
8-10 medium potatoes, peeled and thinly sliced
1 medium onion, peeled and thinly sliced
1 1/2 c grated cheddar cheese
2 can(s) condensed cream of celery or cream of mushroom soup
paprika to taste
salt and pepper to taste

Steps:

  • 1. Put half of ham, potatoes and onions in Crock Pot. Sprinkle with salt and pepper, then 1 cup of the grated cheese.
