MASHED POTATOES WITH HAM

Mashed Potatoes with Ham image

"Mashed Potatoes with Ham evolved from scalloped potatoes, which are tasty but time-consuming to bake. "I warmed up leftover mashed potatoes, then decided to throw in some ham to save a dish," Kathy explains. "The next time I made it, I added a cheese and crumb topping to give this casserole an appealing golden look."

Yield Serves 4 to 6

Number Of Ingredients 13

Dill Dressing
3/4 cup olive oil
1/4 cup white wine vinegar
1/4 cup Dijon mustard
3/4 cup packed chopped fresh dill
Salad
2 10-ounce packages frozen petite green peas, thawed, drained or 3 pounds fresh peas, shelled
1 pound red potatoes, peeled, cut into 1/2-inch dice
12 ounces smoked ham (such as Black Forest), diced
1 15-ounce can black-eyed peas, rinsed, drained
1 large red bell pepper, diced
1 large yellow bell pepper, diced
1 cup diced red onion

Steps:

  • For Dressing:
  • Whisk first 3 ingredients together in small bowl. Stir in dill. Season generously with salt and pepper.
  • For Salad:
  • If using fresh peas, steam until tender, about 3 minutes. Do not precook frozen peas. Transfer peas to bowl. Steam potatoes over boiling water until tender, about 15 minutes. Cool completely. Add to peas. Add all remaining ingredients to peas. (Can be made 6 hours ahead. Cover and chill.) Toss salad with dressing. Season to taste with salt and pepper.

Tips:

  • Choose the right cut of ham: A bone-in ham will give you more flavor than a boneless ham. If you're using a boneless ham, try to find one that is at least 10 pounds.
  • Score the ham: Scoring the ham helps the flavors to penetrate the meat. Use a sharp knife to make shallow cuts in the ham, about 1 inch apart.
  • Make the persillade: Persillade is a mixture of parsley, garlic, and olive oil. It's a great way to add flavor to the ham. To make persillade, simply combine 1/2 cup of chopped parsley, 2 cloves of minced garlic, and 1/4 cup of olive oil in a bowl.
  • Rub the ham with persillade: Rub the ham all over with the persillade. Be sure to get it into the scored lines.
  • Bake the ham: Bake the ham in a preheated oven at 325 degrees Fahrenheit for about 1 hour per pound. If you're using a bone-in ham, increase the cooking time to 1 hour and 15 minutes per pound.
  • Make the mustard potato salad: While the ham is baking, make the mustard potato salad. To make the potato salad, simply combine 3 pounds of boiled potatoes, 1/2 cup of chopped celery, 1/2 cup of chopped onion, 1/4 cup of chopped parsley, 1/4 cup of Dijon mustard, 1/4 cup of mayonnaise, and 1 tablespoon of vinegar in a bowl. Season with salt and pepper to taste.
  • Make the mashed peas: While the ham is baking, make the mashed peas. To make the mashed peas, simply boil 1 pound of peas until they are tender. Drain the peas and mash them with a fork. Season with salt, pepper, and butter to taste.

Conclusion:

This ham persillade with mustard potato salad and mashed peas is a delicious and easy-to-make meal. The ham is moist and flavorful, the potato salad is creamy and tangy, and the mashed peas are a simple but delicious side dish. This meal is perfect for a special occasion or a weeknight dinner.
