PEA & HAM PASTA

Pea & ham pasta image

Celebrate peas being in season with this classic combination. This quick and easy pasta dish takes less than 20 minutes to make

Provided by Samuel Goldsmith

Categories     Dinner

Time 19m

Number Of Ingredients 8

200g conchiglione pasta
160g podded peas
1 tbsp olive oil
1 red onion, finely chopped
100g cooked ham
150ml double cream
½ lemon, juiced
40g parmesan, grated, plus extra to serve

Steps:

  • Bring a large pan of salted water to the boil, then cook the pasta following pack instructions, about 9 mins. Around 3 mins before the pasta is cooked, add the peas.
  • Meanwhile, heat the olive oil in a frying pan over a medium heat and fry the onion for 5 mins until soft but not golden. Add the ham, double cream, lemon juice and parmesan, then season and mix well. Remove from the heat.
  • Drain the pasta and peas (keeping a mugful of the cooking water) and return them to the pan. Tip in the creamy ham mixture and stir everything together to combine. If the mixture seems a little dry, add some of the reserved cooking water to loosen it a little. Serve with extra parmesan on top, if you like.

Tips:

  • Choose the right pasta. Fettuccine is a good choice for this recipe because it is a wide, flat noodle that can hold the sauce well. Other good choices include tagliatelle or pappardelle.
  • Use high-quality ingredients. The better the ingredients, the better the dish will taste. Look for fresh vegetables, flavorful ham, and a good quality cheese.
  • Don't overcrowd the pan. When cooking the pasta, make sure to use a large pot so that the pasta has plenty of room to cook. Overcrowding the pan will prevent the pasta from cooking evenly.
  • Cook the pasta al dente. Al dente means "to the tooth" in Italian. It refers to the texture of pasta that is cooked through but still has a slight bite to it. To achieve al dente pasta, cook it for a minute or two less than the package directions indicate.
  • Make sure the sauce is flavorful. The sauce is the key to this dish, so make sure it is flavorful. Use a good quality olive oil, fresh vegetables, and plenty of herbs and spices.
  • Serve the dish immediately. Pasta is best served immediately after it is cooked. This will prevent the pasta from becoming soggy or overcooked.

Conclusion:

Ham and pea fettuccine is a delicious and easy-to-make dish that is perfect for a weeknight meal. With its creamy sauce, tender ham, and fresh peas, this dish is sure to please everyone at the table.
