1 onion, diced
1 green bell pepper, diced
5 potatoes, diced
1 (16 ounce) bag frozen chopped broccoli, thawed
1 pound diced cooked ham
1 (8 ounce) package sliced fresh mushrooms

1 (10.75 ounce) can condensed cream of mushroom soup
1 (8 ounce) container sour cream
1 (4 ounce) package cream cheese
6 ounces shredded Monterey Jack cheese
½ cup buttery round crackers (such as Ritz®), crushed

3 tablespoons butter
2 cups cubed fully cooked ham
1 small onion, finely chopped
¼ cup butter
3 tablespoons all-purpose flour
1 ½ cups milk
salt and ground black pepper to taste

¼ cup bread crumbs

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.

Steps:

  • Heat oven to 350°F. Spray 2-quart casserole with cooking spray.
  • In 2-quart saucepan, melt 3 tablespoons of the butter over medium heat. Cook onion in butter about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper. 2 cups diced cooked ham
2 cups diced cooked potatoes
2 cups white sauce (recipe below)
1 cup shredded cheddar cheese
1 teaspoon mustard
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon dried onion flakes
2 tablespoons butter
2 1/2 tablespoons flour
2 cups half-and-half (or whole milk)

Steps:

  • Cook potatoes in your favorite method (bake or boil) till done. Allow to cool enough to handle.
  • While potatoes are cooling, prepare white sauce.
  • Melt butter in medium sauce pan over medium heat.
  • Stir in flour to form thick paste. Continue to cook, stirring constantly for 1 minute (this allows the flour taste too cook out).
  • Slowly add half 'n half and continue to stir over medium-low heat until sauce this thickened.
  • Add mustard, salt, pepper, onion & 1/2 cup cheese to the sauce. Stir to incorporate and remove from heat.
  • Preheat oven to 375°F.
  • Spray 2 quart casserole with PAM or your choice of no-stick cooking spray.
  • Dice the cooked ham (left over ham is great for this recipe).
  • Peel and dice the potatoes (approximately 1/2" pieces).
  • Place the potatoes in casserole dish in an even layer.
  • Spread ham pieces over the top of the potatoes.
  • Add remaining cheese to the white sauce and give a final stir (this last addition of cheese should not melt right away) and pour over the ham and potatoes.
  • Bake uncovered for 25-30 minutes.

1/2 green bell pepper, diced

1 tablespoon butter

1 cup diced yellow onion
¼ cup all-purpose flour
2 cups heavy cream
2 cups whole milk
2 teaspoons boneless, skinless chicken breast, cut into 4 portions
½ teaspoon freshly ground black pepper
¼ teaspoon cayenne pepper
⅛ teaspoon freshly grated nutmeg
¼ teaspoon Worcestershire sauce
2 teaspoons chopped fresh thyme leaves
4 ½ pounds russet potatoes, peeled and sliced 1/4 inch thick
8 ounces grated sharp white Cheddar cheese
1 pound thinly sliced ham

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat butter in a pot over medium heat. Add onions and sauté with a pinch of salt until translucent, about 5 minutes. Add flour and cook, stirring, just to take off that starchy, raw edge, about 2 minutes. Pour in heavy cream and whisk to combine. Whisk in milk.
