1/2 tsp baking soda
1 tsp baking powder

GLAZE
1 1/4 c confectioners sugar
1 large juiced lemon, with pulp and grated peel

  • 2. Roll into 2 10 inch logs and wrap in plastic wrap, freeze for at least 1 hour. (You can make ahead and freeze for weeks until needed).

Tips:

  • Use fresh lemons for the best flavor. Bottled lemon juice can be substituted, but the flavor will not be as bright.
  • If you don't have a zester, you can use a fine grater to remove the zest from the lemons.
  • Be sure to cream the butter and sugar together until light and fluffy. This will help the cookies to be tender and chewy.
  • Don't overmix the dough. Overmixing will make the cookies tough.
  • Chill the dough for at least 30 minutes before baking. This will help the cookies to hold their shape.
  • Bake the cookies until they are just set. Overbaking will make the cookies dry and crumbly.
  • Let the cookies cool completely before storing them. This will help them to keep their shape.

Conclusion:

These lemon cookies are a delicious and refreshing treat that are perfect for any occasion. They are easy to make and can be enjoyed by people of all ages. With their bright lemon flavor and chewy texture, these cookies are sure to be a hit.
