4 tablespoons (1/2 stick) butter, plus extra for greasing dish
1/2 yellow onion, diced
1/3 cup all-purpose flour
1 1/2 cups half-and-half
1 1/2 cups milk
Freshly ground black pepper
2 pounds russet potatoes, washed thoroughly
3 cups diced cooked ham
2 cups grated Monterey Jack cheese
Chopped fresh parsley, for sprinkling, optional

Steps:

  • Preheat the oven to 375 degrees F.
  • Add the butter and onions to a large skillet over medium heat and saute until starting to soften, 3 to 4 minutes. Sprinkle the flour over the onions and whisk them together. Continue cooking the onion/flour mixture until golden brown, about 2 minutes. Stir in the half-and-half and milk and whisk around, allowing the mixture to thicken; this will take 3 to 4 minutes. Add some pepper, stir the sauce, reduce the heat and keep warm.

  • Cover the dish with foil and bake it for 40 minutes, then remove the foil and bake until the cheese is golden brown and the sauce is bubbling, an additional 20 to 30 minutes. Sprinkle with chopped parsley if desired and serve it up.

3 lbs red potatoes (1/8 inch) or 3 lbs new white potatoes, thinly sliced (1/8 inch)
1 large onion, sweet, diced
1 1/2 cups gruyere cheese, finely grated
1 1/2 cups aged cheddar cheese, finely grated
1 cup ham, finely diced
1/4 cup fresh parsley, minced
1/4 cup fresh chives, minced
1 (370 ml) can Carnation Evaporated Milk
1 cup water
2 tablespoons butter
2 tablespoons all-purpose flour
2 tablespoons Dijon mustard
salt
pepper

Steps:

  • Cook potatoes in boiling, salted weater until just tender. About 5 minutes. Drain, rinse under cool water. and set aside to dry.
  • FILLING:.
  • Heat oil in large skillet over medium heat. Add onion, stirring occasionally until caramelized and brown, about 30 minutes. Cool. Toss with remaining filling ingredients in separate bowl.
  • In bowl, combine evaporated milk and water. Melt butter in saucepan over medium heat. Whisk in flour and cook for 20 seconds; slowly add evaporated milk/water mixture (about 1/4 cup at a time) whisking continuously to remove any lumps before adding more liquid. Stir in mustard, increase heat to high and bring to a boil, whisking constantly. Once the mixture boils, reduce heat to low and cook 1 more minute or until thickened. Season to taste and remove from heat.
  • Preheat oven 350F . Lightly oil a 9-inch square dish with sides at least high.
  • Place overlapping potato slices in dish followed by 1/2 cup of the filling and 1/3 cup of the sauce. Repeat 5 times, ending with a sauce layer on top. Bake in oven for 30 minutes or until mixture is hot and bubbly and potatoes in centre of pan are tender. Let stand 20 minutes before serving.
  • TIPS: Cooking and baking time will vary according to how thinly you slice your potatoes and the depth of your pan.
  • If top browns too quickly, cover lightly with foil.
  • Place under broiler for the last few minutes fora browned top, if desired.
  • For the bst results, use Carnation Regualr Evaporated MIlk.
