HAM AND CHEESE PUFFS

Ham and Cheese Puffs image

My family used to make these for special occasions, or random visitors! Basically a gougere! They can be baked and frozen then just brought out and thrown in a toaster oven when needed! Sometimes I like a stronger mustard taste so I double the dry mustard. I'm guessing at the amount of servings as I don't think I've ever made a single batch of this recipe - haha.

1/4 teaspoon dry mustard

Tips:

  • Using a combination of all-purpose and bread flours creates a crispy yet tender pastry.
  • Make sure the butter is very cold before grating it into the flour mixture. This will help create flaky layers in the pastry.
  • Chilling the dough for at least 30 minutes before rolling and baking helps prevent the pastry from shrinking in the oven.
  • To make sure the egg wash is evenly distributed, brush it onto the pastries twice, allowing the first coat to dry before applying the second.
  • Bake the pastries until they are golden brown and puffed up. Overbaking will make them dry and tough.
