Yield 4 waffles

Number Of Ingredients 14

1 ¼ cups all purpose flour
2 tablespoons cornstarch
1 teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon kosher salt
½ cup Sam's Choice® Premium Spiral-Cut Ham, finely chopped
1 ½ cups gruyère cheese, divided, loosely packed, finely shredded
3 large eggs, yolks, and whites separated
1 ½ cups buttermilk
2 tablespoons vegetable oil
nonstick cooking spray, for greasing
butter
maple syrup
½ cup Sam's Choice® Premium Spiral-Cut Ham, chopped

Steps:

  • Preheat an 8-inch waffle iron to medium-high heat.
  • In a large bowl, mix together the flour, cornstarch, baking powder, baking soda, and salt. Add the finely chopped ham and 1 cup (100 G) shredded Gruyère, and toss to coat.
  • Add the egg yolks, buttermilk, and vegetable oil, and mix until well combined.
  • Add the egg whites to a medium bowl and whip with an electric hand mixer on medium speed until soft peaks form, 3-4 minutes.
  • Gently fold the egg whites into the batter until incorporated.
  • Grease the preheated waffle iron with nonstick spray, then pour a heaping ⅔ cup of batter into the iron, smoothing with a spatula to cover the iron evenly. Sprinkle the top with 2 tablespoons of shredded Gruyère cheese. Close the lid and cook for 7 minutes, or until the waffle is cooked through and golden brown. Repeat with the remaining batter and cheese.
  • Top each waffle with a pat of butter, a drizzle of maple syrup, and 2 tablespoons of chopped ham, then serve.

Yield Makes 4 sandwiches

Number Of Ingredients 7

2 tablespoons unsalted butter
4 cups thinly sliced shallots
2 teaspoons fresh thyme
1/4 cup grainy Dijon mustard
8 slices rustic white bread, sliced 1/2-inch thick
8 slices Gruyere cheese
8 ounces sliced cooked ham

Steps:

  • Melt butter in a medium skillet over medium-low heat; add shallots. Cover and cook, stirring occasionally, until softened, about 10 minutes. Add thyme and continue cooking until onions are caramelized, about 5 minutes. Remove from heat and set aside.
  • Spread 1 1/2 teaspoons mustard on one side of a slice of bread. Top with a slice of cheese, 2 ounces ham, 1/4 of the shallot mixture, and another slice of cheese. Spread 1 1/2 teaspoons mustard on a second slice of bread and place mustard side down on top of cheese to form a sandwich. Repeat process three times with remaining mustard, bread, cheese, ham, and shallots.
  • Brush top and bottom of each sandwich with olive oil. Place in a panini grill and press until bread is crisp and brown, and cheese has melted slightly, 9 to 10 minutes. If using a grill pan, preheat over medium-high heat. Place a heavy pan on top of sandwiches and press down. Cook, turning once, 2 to 3 minutes per side. Cut sandwiches in half and serve immediately.

Tips:

  • Use a good quality bread. A hearty, whole-grain bread will hold up well to the fillings and won't get soggy.
  • Don't overload the sandwich. Too many fillings will make the sandwich difficult to close and will prevent it from cooking evenly.
  • Use a variety of fillings. Ham and cheese is a classic combination, but there are many other options to choose from, such as turkey, bacon, avocado, and tomato.
  • Don't be afraid to experiment. Try different types of bread, fillings, and spreads to find your favorite panini waffle combination.
  • Serve the panini waffle immediately. This will ensure that the bread is crispy and the cheese is melted.

Conclusion:

The ham and cheese panini waffle is a quick and easy meal that is perfect for breakfast, lunch, or dinner. It is a versatile dish that can be customized to your liking. With a little creativity, you can create a panini waffle that is both delicious and satisfying.
