6 small potatoes, peeled and cubed
3 tablespoons butter
2 cups cubed fully cooked ham
1 small onion, finely chopped
¼ cup butter
3 tablespoons all-purpose flour
1 ½ cups milk
salt and ground black pepper to taste
1 (8 ounce) package shredded Cheddar cheese
¼ cup bread crumbs

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 1 1/2-quart baking dish.
  • Melt 3 tablespoons butter in a skillet over medium heat. Stir in the ham and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.

2 tablespoons butter
1 teaspoon seasoning salt
2 cups hash brown potatoes, thawed
1 cup half-and-half cream
4 eggs
1/4 teaspoon pepper
1 cup ham, cooked and cubed
1/4 cup green onion, sliced
1/4 cup red bell pepper, chopped
4 ounces cheddar cheese, shredded (1 cup)

Steps:

  • Heat oven to 375°F.
  • Melt butter in 10 inch, oven safe, skillet over medium heat and then add hash browns. Sprinkle potatoes with seasoned salt and stir to blend and continuing heating the potatoes for 5 minutes. Take off heat and press potatoes onto bottom and up sides of the pan.
  • Combine half & half, eggs and pepper in medium bowl; beat until well mixed. Stir in ham, 2 tablespoons green onions and bell pepper. Sprinkle half of cheese over potatoes. Pour egg mixture over cheese.
  • Bake for 35 to 40 minutes or until knife inserted in center comes out clean. Top with remaining cheese and green onions. Let stand 10 minutes before serving.

  • Scrub and pierce potatoes. Bake at 375° for 1 hour or until tender. When cool enough to handle, cut a thin slice off the top of each potato and discard. Scoop out the pulp, leaving a thin shell., In a large skillet, saute the ham, onion, celery and red pepper in oil until vegetables are tender. Set aside. 1 cup shredded swiss cheese
4 tablespoons milk
3 green onions, finely sliced

  • Half the potatoes and take pulp out leaving 4 shells.
  • Mash potatoes with milk and pepper. Add all but a hand full of the cheese, ham and onions.
