1 large carrot, sliced

1-1/2 cups 2% milk
3/4 teaspoon salt

  • Preheat oven to 375°. In a saucepan, bring the potatoes, carrot, celery and water to a boil. Reduce heat; cover and cook until tender, about 15 minutes. 1 cup cubed ham
1 cup chopped onion

1 cup frozen peas
1 cup milk
½ cup sour cream
½ teaspoon onion powder
½ teaspoon garlic powder
1 (6 ounce) can French-fried onions, crushed

Steps:

  • Bring a large pot of salted water to boil. Stir in the macaroni. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes; drain.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Spray a 9x13-inch baking dish with cooking spray.

1 1/2 lbs fresh sweet potatoes (yam variety)
1/4 cup butter or 1/4 cup margarine
1/2 cup onion, chopped
1/4 cup flour
1/2 teaspoon salt
1/2 teaspoon basil, crushed
1/4 teaspoon dry mustard
1/8 teaspoon pepper
1 1/2 cups milk
1 1/2 cups swiss cheese, grated
3/4 lb ham, cooked, cubed

Steps:

  • Wash sweet potatoes. Cook unpeeled sweet potatoes, covered, in small amount of boiling salt water untill tender, about 20 to 30 minutes. Cool. Peel and slice 1/4 inch thick; set aside.
  • Melt butter in medium saucepan. Add onion, cook until tender. Remove from heat; stir in flour, salt, basil, mustard and pepper. Cook over low heat until bubbly, 2 to 3 minutes. Remove from heat; stir in milk all at once. Cook over medium heat, stirring constantly, until mixture comes to a boil. Boil and stir one minute. Remove from heat. 2 1/2 cups asparagus, chopped into 1-inch lengths
1/4 cup flour

1 tablespoon butter
3/4 cup red onion, minced
1 tablespoon fresh lemon juice

4 cups cauliflower florets, steamed to tender crisp
2 cups cubed cooked ham
1 1/2 cups mushrooms, sliced
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons flour
1 cup milk (2% is OK)

1 cup aged cheddar cheese, grated
1/2 cup sour cream
1 tablespoon dry breadcrumbs
salt and pepper

Steps:

  • Mix cooked cauliflower ham and mushrooms.
  • Season with salt and pepper.
  • Melt butter in a sauce pan and stir in the flour.
  • Stir in the milk and cook until it has thickened.
  • Stir in the sour cream and cheese; stir until the cheese has melted and the sauce is smooth Put ham and cauliflower in to an ungreased 3 quart casserole dish.
  • Pour sauce over top.
  • You make now let this sit in the fridge until 40 minutes before dinner or continue to the finish- Preheat oven to 350°F.
  • Sprinkle with crumbs.

2 packages (10 ounces each) frozen spinach, thawed and squeezed dry
2 cups Simple White Rice
2/3 cup whole milk
2 large eggs
1 cup grated Gruyere cheese
Coarse salt and ground pepper
1 tablespoon extra-virgin olive oil
1 medium yellow onion, finely chopped
2 garlic cloves, minced
1/2 cup dry white wine
1/2 pound ham, chopped

Steps:

  • Preheat oven to 375 degrees. In a large bowl, combine spinach, rice, milk, eggs, 3/4 cup cheese, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. In a large skillet, heat oil over medium-high. Add onion and garlic and season with salt and pepper. Cook, stirring occasionally, until onion is soft and beginning to brown, about 10 minutes. Add wine and cook until evaporated, about 3 minutes.
